Chocolate biscuits from "Vienna sausage"

Chocolate cookies from Vienna sausage

Ingredients

Flour 170 g
Baking powder 1.5 tsp
Salt 1/4 tsp
Cinnamon 3/4 tsp
Allspice 1/4 tsp
Black pepper 1/2 tsp
Cayenne pepper Pinch
Cocoa 50g.
Butter 170 g
Vanilla extract 1 tsp
Sugar 200 gr.
Egg 1 PC.

Cooking method

  • 1. Mix spices, flour, cocoa.
  • 2. Beat butter; add vanilla and sugar and beat well. Beat in an egg until it is mixed with butter. Drive in flour mixture at low speed, just until mixing. Do not forget to scrape everything off the walls with a spatula.
  • Form a sausage or a long brick from the dough (about 30cm long, 8x2.5cm). Wrap in parchment, freeze until firm. Can be kept frozen for 1-2 months.
  • 3. Cut off slices about 5-6mm wide with a sharp knife
  • 4. Bake at 180g on foil or fine parchment, 10-12 minutes. Cookies are ready if, when touched with a finger, the surface is soft and slightly springy (the main thing is not to overexpose in the oven, the biscuits still continue to cook when cooled!). Immediately remove the foil / parchment with cookies from the baking sheet, use a spatula to transfer the cookies to the wire rack to cool.

The dish is designed for

About 50 pcs.

Time for preparing:

4 hours freezing / 10-12 minutes baking

Cooking program:

Oven 180 degrees

Note

The recipe is taken from the book of American Maida Heatter (Great Book of Cookies).
Maida writes that these are Austrian cookies, the original name is Wienerstube Cookies.
This cookie is an excellent example of the so-called. "Frozen Cookies" (Icebox Cookies) - the dough is made in advance, stored in the refrigerator, and when, for example, "Guest on the doorstep" - you can get such a "Sausage" from the freezer, cut off the required number of cookies, and after fifteen minutes on your table fresh, aromatic homemade biscuits without preservatives, synthetic additives and hydrogenated fats .. What could be better ?!
These cookies melt in your mouth and are crispy, with a slight unobtrusive pungency and delicious chocolate flavor.
Bon Appetit!
