Grated chocolate 75 g

  • I propose the original recipe for Prince Pückler's ice cream from the book "Germany. Gastronomy", as well as interesting facts from his biography.
  • Prince Hermann von Pückler-Muskau (1785-1871) was a desperate lover of life. He spent all of his fortune to lay out the magnificent landscaped parks, and also wrote exciting travel notes.
  • Today, the echo of his fame, when his name was on everyone's lips, is the tricolor ice cream cake "Prince Pückler".
  • There are three more or less reliable versions explaining the reasons why this tasty delicacy was named Pückler. According to one version, the prince brought the recipe from Arabia, according to the second - he himself created this multilayer ice cream, the third claims that the ice cream was dedicated to the noble gourmet by the pastry chef Schulze from Lauzitz. At any rate, Pückler used the ice cream recipe as the basis for a passionate love letter to the innkeeper's daughter Caroline:

  • For curiosity, raspberry jelly,
  • For the wanderlust, almond cakes,
  • Ice cream for the love of life,
  • To be sure, white gelatin,
  • For mental addiction vanilla sugar
  • This is the recipe for my ice cream just a few days ago.
  • They say that Caroline even cried, because Pückler measured so little for fidelity - only 4 g of gelatin.
  • His adventurous romances are one thing, and Pückler's true love was about something completely different. He aimed to transform the English-style Muskau (Upper Lausitz) into the most beautiful landscape park in Europe. In 1815 he began work on his family estate, but a year later he ran out of money, so he was forced to marry the wealthy Countess Lucia von Pappenheim. Indeed, he managed to create a paradise landscape on sandy and clay soils with artificial lakes and water filtration, with mounds and more than 3,000 different trees and shrubs, which he partly bought with adult plants. The 600-hectare park presented nature “in its most beautiful moments”. However, in 1845 Pückler, having large debts, was forced to sell Muskau. But soon after that he was already creating a new garden landscape in Branitz near Cottbus. There, on the 60-foot "sea pyramid", rests his heart.
  • Preparation
  • - Make your favorite almond cakes. I made according to the recipe of Julia Vysotskaya.
  • - Wash the strawberries, remove the stalks, dry and beat with a blender in mashed potatoes with 50 g of sugar. If desired, rub the puree through a sieve to remove the seeds, then add the sugar.
  • - Crush the almond cakes, saturate them with 6 tbsp. l. cherry liqueur.
  • - Whisk in the cream and divide into 3 parts. Combine one third of the cream with all the strawberries and 1/3 of the almond brownies. Stir and fill in the dome shape, level the top. Place in the freezer and keep there until solidified.
  • Prepare ice cream in the shape of a dome and place in the freezer for 20 minutes.
  • - Mix the second third of the cream with the remaining liqueur and one third of the almond cakes.Spread over the strawberry mass and place in the freezer again until solidified.
  • - Stir the remaining cream with the chocolate and leftover almond cakes and place in the top pan as a third layer, smooth well, cover the pan and refrigerate for 4-5 hours.
  • - Dip the pan in hot water before serving, turn it over onto a platter when it begins to thaw, garnish with whipped cream, grated chocolate and fresh strawberries. Serve quickly.

Note

Since ice cream is prepared by simple freezing, it melts very quickly. Therefore, take it out of the freezer before serving. Moreover, everything for decoration must be prepared in advance.
I whipped cream separately for each layer, dividing the total amount into 3 parts.
