Cooking method

  • Mannheim is the third largest city in the federal state of Baden-Württemberg, the cultural center of the Rhine-Neckar region. The image of the central part of the city on the map resembles a horseshoe in shape with a grid of streets placed inside, forming the so-called Mannheim squares.
  • The Lorsch Codex in 766 contains the first mention of the village of Mannenheim. The inconspicuous settlement gained regional significance in 1349 with the construction of the Eichelsheim fortress. In 1566, the village with 700 inhabitants was considered one of the largest in the Heidelberg region.
  • On January 24, 1607, Mannheim received city rights after Frederick IV laid the foundation stone of the Friedrichsburg fortress. The Thirty Years' War and plague epidemics led to the fact that the city's population was reduced to 1200 people. Elector Johann Wilhelm drew up a proclamation in 1697 calling on refugees and settlers to become new townspeople, which was successful, the era of renaissance began. Today it is home to over 325,000 people of 170 nationalities.
  • The most significant attraction of Mannheim is the castle built in 1720 for the Elector Karl Philip, who moved here from Heidelberg. The residence has more than 1000 halls and rooms and, together with the adjacent park of 6 hectares, is considered one of the largest Baroque buildings in Germany.

  • The Lutheran Church of Christ was built in 1907 for the 300th anniversary of the city; services in it are accompanied by the largest organ in Germany, created in 1911 by master Steinmauer. In total, only a few of these instruments of the early 20th century have survived, so the Mannheim organ can be considered a real historical relic.
  • On the outskirts of the city, on 21 hectares of land, there is the Herzogenriedpark with its own rose garden, which contains more than 100,000 flowers. The park lake, fountains installed throughout the territory and containers with thermal water give life-giving coolness in the heat. A small circus, an attraction with water pistols, and a cave labyrinth are open for young visitors to the park.
  • A local culinary delicacy is a gingerbread-like confection called Mannemer Dreck, the name of which is conditional and literally means "Mannheim mud". Despite the unattractive name, the world-famous nut gingerbread is delicious and a popular souvenir favored by guests and locals alike.
  • In 1822, the streets of Mannheim were not as clean as they are now. And then the municipality issued a decree:
  • "Jedermann mit zwei Reichstalern Strafe belegte, der den im Hause gesammelten Kot mit Kehricht auf die Straße brachte" (I could not translate it into an accessible form, I hope Lerele will help). This decree inspired bakers and a very enterprising one came up with the very same gingerbread.

  • I prepared the wafers for this recipe Masinen, you can take ready-made waffles. The diameter is 5 cm, I needed 70 pieces, I rolled out the dough very thinly with a thickness of 1 mm.I cooked in a dry frying pan on each side.
  • Grind nuts and biquit into crumbs. Mix all ingredients except proteins, sugar and marzipan. Put the marzipan in the freezer.

  • Grate marzipan and mix.

  • Beat whites with sugar until strong peaks and gently mix with a spatula into the main mixture

  • We spread our walnut dough on the wafers. And leave for 5 hours at room temperature to dry.

  • Next, bake in an oven preheated to 200g for 10 minutes on the second shelf from the bottom. Let cool completely on a wire rack. Melt the chocolate in a water bath and apply it to the gingerbread with a brush. Traditional gingerbread cookies are not decorated, they are only covered with chocolate, but I poured some with chocolate, and some decorated with nuts.

Alyona, get it - get it! I already hid them, mine's gone, they left, they don't know what awaits them and how many there were! I'm with the younger at home, he sleeps at night, and I cook

Irina, thanks for the taste and smell of the gingerbread! the consistency is not at all the same, soft and grainy, I really thought maybe the nuts should be ground into flour .... I've seen enough of the original pictures, it's hard to understand, but like flour .... I'll wait for news from Germany))) what are you saying! what 48! I have 24, just everyone is asleep, but I am not
