I liked this recipe very much. I planned to do it at the weekend. Now I am reading Elena Malakhovets (I read books with recipes like fiction) and came across this recipe number 2049 Arkas.
(Proportion for 10 people.) Break the yogurt, sour cream, eggs well, pour in milk, add washed and wiped raisins, a little salt, stir as best as possible, stir to boil, stirring, so that the milk curdles. Drain the serum into a napkin to glass, add sugar, stir, then bandage the napkin and hang it in the cellar to cool. Serving, put it carefully on a dish, pour over whipped cream or whipped sour cream with sugar and cinnamon.

Issue:

8 stacks milk.

1 tbsp. curdled, 2/3 tbsp. sour cream,

2/3 st. raisins, 5-6 eggs, ½ tbsp. sah.
1 stack. the thickest cream or sour cream.

¼ - ⅓ Art. sugar, cinnamon or vanilla.

The recipe is very similar to the recipe for this cheese. now I'll try to make Malakhovets according to the recipe. I will report back on the weekend.

Tatyana, thank you very much for the recipe! I really liked this cheese, I am making a simple salad with it: bell peppers, onions slightly marinated in homemade apple cider vinegar, milk cheese, a little salt and vegetable oil. Delicious!

Tatiana, good morning. I do the same with the report about cheese. I love these cheeses very much. Yesterday I did. Here he is.

Milk cheese
I just laid 6 eggs. And she took the perfect milk. I got a whole kilogram of cheese and 2 liters of whey.
The only question is how to store such cheese?

Natasha, oh what a pretty little cheese! And the exit is wonderful. Did milk and sour cream increase the rate?

No, I left it as it is. The cheese is delicious.

Gorgeous! Thanks for the advice

Know how else to store it? And then I made a full portion and think about how to save it, so that it doesn't wind up and dry?

It will hardly work for a long time ...

I pushed mine into the freezer ...
TATbRHA
Natalia-65, wonderful cheese; clever !!

No, no freezers: the structure will change. A week will be stored in the refrigerator in a vacuum container. Yes, it winds up quickly - and precisely because of the presence of eggs, I think. But this does not spoil the taste in the least. For a small amount, a PVC bag is enough.
Natalia-NN
TATbRHA, Tatyana, thanks for the answer. I think that the week will not last. : girl_in_dreams: Let's eat.
stanllee
Thanks for the recipe. Loved the cheese.
I have a question: cheese weighing 764 g turned out from the initial products, as I understand it, probably from sour cream. Maybe you should take a liter of milk, and everything else is on the list? Or it won't work.

we don't even have such thoughts - the cheese just flies away ... yesterday I did it with the addition of caraway - today half is gone, and after all, there were no guests at home! until tomorrow if 100 grams live ...
I'm more worried about the question of whether this cheese can replace cottage cheese in strudel

TATbRHA
stanllee, I think that cheese weighing 764 g came out not only from sour cream: eggs also weigh something ... And most importantly, from milk alone (and without eggs) cheese is obtained: from 3600 liters of skim milk - 500 g of cheese. That is, there is also a "solid part" in milk, which then becomes cheese. Of course, you can try to cook cheese in your own way (eggs will cook in different ways and give the "hard part"), but it will be a completely different cheese.

Piano, only by trial you will find out ... Don't try it yet: apparently yours haven't finished eating it yet ...

After 10 minutes of boiling sour cream with milk, the sour cream curdled, but the liquid did not become transparent, waited unsuccessfully for another 5 minutes and threw it onto cheesecloth.
I got one to one! (((eeeh

Girls, it's all about milk. The first time I made it from store-bought milk, the package said "Selected", the cheese turned out to be very tasty. The next time I made it from milk, which is sold on tap in the courtyards from a barrel, the result was the same as yours, now I make it only from the purchased "Choice".
Altusya
Tanya, and put it under the press in the refrigerator or in the room?
TATbRHA
You can put it in the refrigerator, but nothing bad will happen to it in a room in 6-8 hours! Remember, Altusya, - an ancient recipe, what refrigerators were at that time; they cooked, ate, fed the children, kept them, at best, in a closet at room temperature.
Altusya
Tanya, I did it and have already tried it. I put a little salt, and the husband said that he was okay! He liked the cheese too.
But it reminds me of just pressed cottage cheese.
We need to buy an enzyme and try to make another cheese with it.

But this one is both gentle and not confusing.
Thanks for the recipe.
Altusya
Tanya, my husband just bombarded me with his desires to eat such cheese always!
Now I don’t know where I’ll put the serum. But he promised to drink it))
Natalia-NN
Tatyana, I have another thank you for the cheese, now from colleagues. She treated me today. Everyone is delighted. But I am with my additions (don't swear too much)
I just started adding calcium chloride.
TATbRHA
Natalia-65, of course, I will not swear! To your health!
And why not add calcium. I'm not risking myself: I'm afraid that osteochondrosis will not like it. Or maybe I'm wrong.
Natalia-NN
Tatyana, go to the tea pavilion, there Lina will tell you everything. But I realized that he had no effect on health.

Olka, according to the latest data it is not useful ...

Tutochki read ...
Altusya
Mdyayayaya .... I'm certainly not special in this. And the information, I see, is different.
If you get in, then head over to and study.

Inus, there is no desire now and time. Thoughts aloud, her grandfathers and our grandmothers ate. No, they, of course, have never been (possibly), and there are no statistics on health in those years. But they seem to have lived up to what age hoo.

Well, I do not drink it, I am not confused. But I don't bake so much either.) Sorry for her darling))

It's strange somehow, all this is far-fetched. Serum is impossible - brunost can be - lactose has disappeared from it or something, lactose is natural milk sugar, there are a lot of useful amino acids in whey ... I think I need to try drinking whey and just listen to your body, and not read all sorts of cleverness ... how does your skin and hair change over time - without washing ...
Altusya
Yes, Natasha, ot our approach!
Creamy
Our local dairy has been producing various whey-based berry juices for many years. Fruit and berry purees, all sorts of different pineapple and apple purees are dissolved in the serum. banana and others, both mono and pineapple-banana mixes.

And who said that brunost is possible on Sybarite? I cited an excerpt from the author's answer to the nutrition system, which I adhere to and on which I have already dropped 18kg. Someone on their diets eats lard with meat without carbohydrates - and is happy. There is nothing absolutely useful for everyone in all situations. We are talking about people seeking to lose weight according to certain principles and attitudes, nothing more. If you do not have this problem, it has nothing to do with you. But, probably, before making a verdict of "cleverness", it is worth at least approximately to try to understand what is at stake. And so it turns out: "I have not read Pasternak, but I condemn" ..
NatalyMur
Anna1957, I have not read all your posts, sorry. I hear about Sybarite for the first time. In the subject of milk cheese, there can be no talk of diets for losing weight at all - 2.7 liters of milk plus 800 g of sour cream - what is this for losing weight? This cheese is full of calories, and it has whey.
And I also went through the above link to Cottage cheese - there you write
Quote: Anna1957
And you can also make Norwegian brunost cheese (or brunust - I don't know how to do it right).
So I made a conclusion - brunost is possible - serum is not allowed ... Once again I apologize, since I did not understand you correctly.
And by the way, about all sorts of cleverness about glycemic indices, I have diabetes mellitus, I drink quite a lot of whey and do not observe any particular deterioration, unless, of course, it is too much to jam with rolls ... There are also glucometers for control.
If you're on a diet, it doesn't mean that whey is bad for everyone.
Anna1957

And I did not develop type 2 diabetes, high sugar as a result of losing weight decreased to normal, as did blood pressure and cholesterol. Actually, this was the goal of losing weight. And the deterioration in diabetes, unfortunately, is far from immediate and not visible to everyone. But this, of course, is everyone's own choice, few people are convinced by words. And, naturally, I do not urge anyone to follow my example.
Of course, fat cheese is not a product for weight loss, I myself make processed cheese from 1% cottage cheese. It's just that my link, which Krosh gave, was a little confused. The link about brunost does not apply to losing weight, the person asked for the option of disposing of the serum. And, you see, making this cheese and eating it are different things.
NatalyMur
Anna1957, I agree with you, in your situation, whey, which is a rather fatty product, may not be needed. But people begin to transfer your words in the form of the phrase WHEY IS NOT USEFUL TO DRINK, the rest is omitted.
Therefore, it is better to say that the SERUM IS VERY USEFUL, but like any product has its own but ... Otherwise, people will start pouring it out, or use it only for cosmetic purposes.

By the way, I have type 1 diabetes for 23 years.

Yes, they'll figure it out, big girls already. And, by the way, the problem is not in fats (if whey is from skim milk), but in carbohydrates. I would say that whey is acceptable for those for whom problems with an excessive amount of carbohydrates are not yet worth it.
And with type 1 diabetes in general, the situation is different, insulin injected from the outside in the correct dosage should maintain the level of sugars at normal levels. We are interrupting our own, to which resistance has already developed in the tissues over the years of uncontrolled nutrition. But that's not a topic for discussion here.

I went and looked at the pack: "Nutritional value per 100 g of product: fat - 0.1 g, protein - 0.8 g, carbohydrates - 4.5 g; energy value (caloric content) - 22 kcal ".
Serum is useful !! SERUM IS VERY USEFUL.

I'll have to, because I haven't eaten anyone here ... And, by the way, in fact, I didn't say a single word against the recipe. Out of the kindness of her soul, she advised a way to dispose of excess serum - for this she was ostracized. I decided not to aggravate the situation - they pointed to the door Thank you, fairy godmother.

Soooo ... the second run started. Today I did it with paprika. Serum already costs so much uuuu !!!

By the way, my husband tried the serum and says he won't drink this. He said he drank sour in the market.
Why was it sour?
Elena Bo
It will stand warm, it will be sour.
Altusya
Ahh .. so it just needs to be left to sour?

Thank you so much. Now I will leave, let him consume.

How I love serum! I buy it in its pure form in the store and two liters a day I can "persuade" easily.

TATbRHAThank you for such a simple and wonderful recipe!
I did everything exactly, only boiled it in a cartoon on the Baking program. It took longer to boil than in a saucepan (well, I don't think I tried it), but nothing escaped
My daughter didn’t check it out, but for now, she’s a big skeptic and she is very careful about new things. The parents really liked it.
so big thanks from me for the awesome treat
