Dutch herring

Ingredients

Fresh frozen herring 2 pcs
Medium onion 2 pcs
sugar 6 teaspoons flat
salt 4 teaspoons flat
Carrot 1 PC
Lemon 0.5pcs
Bay leaf 5 pieces
peppercorns 10-12 pcs

Cooking method

  • Defrost the herring, peel, remove all bones. Cut the fillet into pieces, 1.5-2 cm wide.
  • Grate the carrots, cut the onion into rings. lay out in layers:
  • onions, bay leaves, carrots, a slice of lemon, ~ 1 teaspoon of sugar, pepper, pieces of herring. Press lightly on each layer. Two herrings made four fillets. So I got five layers of vegetables and spices, and four layers of herring. There should be vegetables on top. Close the lid and send to the refrigerator. Three days later, you have a delicious herring on your table.

Note

Today I was treated to this herring prepared according to this recipe, very tasty! And they said that you can cook such a herring from lightly salted fish, only you don't need to add salt. Which I did))

and how long can she stand in a jar like this?
now)) But before doing it, I looked on the Internet, people put herring in two half-liter cans at once. As I understand it, what to eat one, and the second a little later? Some people write that this amount is enough for 4-6 servings. Probably, who has what appetite)) But I would not keep it for a very long time. There are no special preservatives there: there is little sugar, salt, no vinegar, some add vegetable oil only when consumed.

Tell me, you can make mackerel like that.?
They write that yes. I read about this on various sites.
Now on FB I found comments that different fish do this. True, no confirmation of this))

I had salted herring, so I didn't use salt at all. But I would mix it if I was cooking fresh frozen fish.

celfh Tatyana, simply THANKS - for the recipe!
I love herring, and so that it is not too salty

I climbed on the Internet, looked at this recipe. And I didn't understand something. There is no salt anywhere in the recipe. They write: add a little salt when used. It is not clear whether the herring is either fresh or salted. True, they write that the herring must first be defrosted. It means fresh. Tanya, now I realized that you had salty

I liked this one more. Today I added a little marinade from the jar according to the Countryman's recipe to a jar of herring "in Dutch".
This is if we talk about pickled herring. And if it's simple to salt, then we have the best recipe here. https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=128073.0

In general, for me any herring is a Thing!
Albina
Lena, thanks for the tip: I haven't seen the recipe from the Countryman before.

celfh, Tanya, I completely forgot about your wonderful recipe. I made a mackerel, but I completely forgot about herring like that. Today I took out a salted herring - I’ll tell you straight, not hello, I washed it, peeled it, cut it, put an onion there, lemon, spices, sugar - put it. I think that after such resuscitation it will turn out well!

Great recipe !! : girl_claping: I will do the same when I get hold of fresh frozen !!

Girls, good afternoon! Do the jars also need to be shaken, as it is written in mackerel? Salted yesterday, but forgot to buy a lemon. Such a pity! The herring was already thawed, so I just had to sprinkle it with citric acid.

celfh, Tanya, it turned out delicious herring, I liked it. It was only necessary to reduce the sugar and salt, because I did not have such a fatty fish.
celfh
Natalia, to your health!
Florichka
This is delicious. I did everything like this, with a current of 3 tsp of salt. And I didn't use all the curing mixture. I had one herring. It turned out very gentle. I think you can try to make a rasp like that, they salted it in Soviet times. I just sprinkled the layers a little.
