Another ham was made for Easter.
Here I read the basic recipe for marinade, it was very useful to me as a beginner ham maker. The picture turned out like this:
Marinade for ham (for 1 kg of meat):
* Soy sauce - 1 tbsp. l.
* Sugar - 1 tsp.
* Paprika - 1 tbsp. l.
* Salt - 0.5 tsp.
* A mixture of peppers - 0.5 tsp.
* Coriander - 1 tbsp. l.
* Nutmeg - 0.5 tsp.
* Vodka - 3 tbsp. l.
For this product:
* Pork leg - 850 g.
* Chicken legs (fillet) - 650 g.
* Schwartenblock - 100 g.
* Olives - 1 jar - we had olives with salmon)))

Cut the pork into large pieces; you don't need to cut the chicken fillet.
Add ingredients for the marinade. Mix well. Cover the dish and put in the refrigerator for a day.
In a day:
Pork leg (700 g) in a meat grinder (fine wire rack 2 times)
Pork leg (150 g) and chicken fillet - cut into 1.5 cm cubes.
Add the Schwartenblock, finely chopped olives. Stir with a spatula (so as not to warm with your hands). Better yet, stir in a mixer bowl.
Place the baking bag in the ham. Put the minced meat in portions and tamp it down so that there are as few voids as possible. Fold the top edges of the bag over the ham. Cover with a lid, put on the springs. Put the structure in the refrigerator for 2-3 hours.
Place the ham in a deep skillet. Pour 2-3 cm of water.
Preheat the oven to 180 * C. Bake for 1.5 hours.
If the water level is critically low, then you need to add. This is done so that the marinade flowing out of the ham does not burn. In addition, it will be easier to wash the ham.
We remove the baked product from the oven. Cool to room temperature and put in a refrigerator overnight.
In the morning, remove the springs and lids of the ham maker. We release the package from the cylinder.
The finished ham is cut wonderfully. has a dense, moist structure.
And the characteristic smell and taste of olives gives the ham a pleasant sourness.

Perhaps I am doing something and not very competently, but, so far, I do not have a temperature probe, therefore I bake, in time, purely intuitively.

I tried to make ham in every way. I liked the oven most of all. Yesterday I made a ham with pickles. Now I took it out of the ham and cut it. It is cut very thinly. Not brittle. and pleasantly moist. I added a Schwarten block to it, and the chicken skins and pork meat were with fat (I cut some of the fat and chopped into small pieces, I cut some of the meat 1X1 cm)) I ground the rest of the pork and chicken legs very finely into a meat grinder. Well, I'm happy with the result.

There is a frying pan on the bottom stone, on top of its grate, the ham maker does not touch the hot water, which I pour to 3/4 of the pan's height so that the leaking juice does not burn.
The oven control is electronic, at the very beginning I selected the temperature settings that correspond to the recommended temperatures inside the meat mixture.
Time 3.5 - 4 hours corresponds to the diameter of my ham makers.

It's great when everything is adjusted. And my gas oven "zhzhOt" as it can - the lowest temperature is 130 * C. You can try on this mode, but I don't know how long it might take. Intra-meat t-ru I cannot measure.
