I was given 2 recipes, both "safely" were lost over time. Therefore, when the "itch", I got this one. Now I use it. I counted it in grams. The recipe is standard, +/- in the weight of the ingredients, if you compare the recipes available to you.
Flour -450-480 (3 stack)
Sugar -210 (1 stack)
Oil drain -200
Baking powder-10 (1 sachet)
Grams, this is my conversion. And the filling is mine, unchanged.
Curd -500
Egg -2 pcs
Sugar -150-210
Raisins -2 handfuls
Vanillin -1 pack.
I do not freeze the butter, I throw it straight from the refrigerator into the "dry mixture" (so that my hands do not get dirty). I press the whisk several times on the butter, it turns into pieces. Stir lightly and turn on the mixer. I interrupt with a mixer, a homogeneous mixture is obtained. Pour in 2/3, filling, the rest of the mixture. All.
In Zhardiukh I baked for 2/30 minutes. I pierced it with a match, entered easily and was a little damp (from cottage cheese). This confused me. I turned it on again, I don't remember how long, but more than 10 minutes. The result was surprising. Gentle, crumbly sandy base.
