Ingredients

Cooking method

  • This is a recipe for German dumplings with cottage cheese and green onions.
  • My great-grandmother and German grandmother called them "Keseclimp".
  • In Germany, dumplings are called differently: Klump, Knepfel, Maultasehen (they are also dumplings) - they are often called berry dumplings.
  • I would like to share the "bright" peculiarities of preparing these dumplings by grannies.
  • 1. For a start, the Germans like to sculpt square dumplings, most likely because it is convenient and fast. At least I have not seen such molding of dumplings among other peoples.
  • 2. A special feature is that ready-made dumplings are served with Filsel - crumbs of stale bread fried in butter .. Germans are very careful about bread, especially the older generation, even crumbs are used ... They are also added to berry dumplings, - bread absorbs excess juice from berries ..
  • 3. Well, one more feature of making these dumplings is that pumpkin was added to the granny's dough, which makes the dumplings an appetizing yellow color.
  • With the addition of pumpkin to the dough, it was made at the end of summer, when the onion was completely cut off and the pumpkins were already ripe; or at the end of winter, when the pumpkins remain uneaten over the winter and the onions grown on the windowsills grow back (:

  • Cooking method:
  • Knead the dough from pumpkin puree, water, eggs, salt, flour.
  • Stir cottage cheese with green onions, salt and pepper. I also added 1 spoonful of sour cream so that the curd does not crumble.
  • Roll out the dough into a thin pancake, cut into squares from the dough. Put the filling, close up as shown in my photo.
  • Throw in boiling water, cook for 3 - 5 minutes. after the next boil of water.
