Ingredients

Welding:
Fast oat flakes 10 g
Boiling water 40 g
For the test:
Welding all
Wheat flour 225 + 425 g *
Boiling water 375 g
Salt 0.5h l.
Vegetable oil 50 g
Cherries, sugar for the filling
Cottage cheese, milk, sugar for the sauce

Cooking method

  • For brewing, pour boiling water over the flakes, stir.
  • Mix 225 g flour with salt and butter. Pour in boiling water (375 g), stir quickly. Add the brewed flakes, stir again and leave for 10 minutes.
  • Add the remaining flour, knead in a soft teto.
  • * According to the recipe, the dough with an egg was 225 g. I had to add as much as 200 g during the kneading process, because the dough did not want to gather in a lump, but was smeared along the walls of the bowl. As a result of the test, it turned out VERY much. Next time, I will reduce the proportion of water and flour.
  • Collect the dough in a ball, put in a bag and refrigerate for at least 1 hour. I had 2 days. Maybe more.
  • Pinch off small pieces from the dough. Keep the rest in the refrigerator. Roll out thinly. I rolled it out on a dough sheeter. At a thickness of 0 - 3 times, at a thickness of 2 - 3 times, at a thickness of 4 - 3 times, at a thickness of 5 -1 times.
  • Cut circles from the rolled dough with the back of the mold:

  • Put the cut out circle on the mold, press the edges:

  • Pour a pinch of sugar and 3 cherries in the middle (in the photo the circle will not snuggle to the edges, this is the very first dumpling, the technology has not yet been adjusted). Previously, I just mixed sugar with cherries, which gave juice and by the end of the modeling just "flowed". And with this method, there is practically no juice. :

  • Holding the dough by the upper edge, close the mold, press down, take out the finished dumplings, put on a tray sprinkled with flour.

  • Boil in salted water for 3-5 minutes.
  • For curd sauce, beat the curd with milk and sugar.
  • I don't know about you, but I ate dumplings as a child, biting out the middle and leaving thick and tasteless edges. I don’t like to roll with my hands, and I don’t know how, therefore we have dumplings very rarely. But with a dough sheeter it's just a holiday !!! Everything was eaten clean. The dough is very tender and soft !!!
