Ingredients

Butter (room temperature) 220 gr.
Powdered sugar 125 gr.
Egg (small) 1 PC.
Flour 330 gr.
Salt pinch
A mixture of ground spices (cinnamon, cardamom, nutmeg, cloves) 10 gr. ( I have 5)

Cooking method

  • Speculos or speculos (fr. Spéculoos), also speculas (Dutch. Speculaas), speculatius (german spekulatius) - spicy crispy biscuits originally from Belgium and the Netherlands. Cookies are also common in Germany and Denmark, where they are traditionally baked for Christmas. In Belgium and the Netherlands, speculos was originally baked for St. Nicholas Day (December 6), but is now eaten at all seasons. Rectangular cookies are cut out of the dough using a wooden or iron mold, while the figures represent motives from the life of St. Nicholas: a ship, a peasant yard, an elephant, a horse. There are also images of mills and other objects. The finished biscuits are thin and very crispy.

  • The name speculos is supposedly derived from lat. speculator "seer", "overseer", the Latin name for the bishop (which was St. Nicholas). According to another version, the word comes from lat. speculum, "mirror," indicating the mirror image of the relief on cookie cutters.
  • Until the end of World War II, speculos were, due to high prices for spices, a rather expensive pleasure, inaccessible to the common people. The biscuits are now produced on an industrial scale, but they are still baked in small bakeries as well.

  • The dough is soft and sticky. Wrap it in a bag and put it in the refrigerator for at least 6 hours (you can overnight).
  • Roll out the dough 3 mm thick on a floured table, cut out the cookies. Place the cookies on a baking sheet (it is better to transfer them with a spatula, since the dough is very tender and the cookies may lose their shape)
