Pickled Vogtland Herring (Einmarinierter Hering)

Ingredients

Lightly salted herring fillet 500 g
White and red onions 2 pcs.
Pickled cucumbers 3 pcs.
Sour apples 1 PC.
Sour cream 200 g
Mayonnaise 150 g
Juniper fruit 5 pieces.
Spices (mustard seeds, pepper, dill) taste

Cooking method

  • Cut the herring fillet into small slices.
  • Cut the onion into half rings.
  • Apple - ideally "Antonovka" - peel and cut into cubes.
  • Cut the pickled cucumbers into slices.
  • We mix everything.
  • Prepare the filling in a separate bowl - mix sour cream with mayonnaise and spices
  • Fill in the herring and put in a cool place overnight.
  • You can also add a tomato, red pepper, carrots - the imagination is endless.
  • But the marinade should consist of a lactic acid product - sour cream or yogurt, cream or mayonnaise.
  • With boiled potatoes - what you need!

About the marinade - when we lived in Germany in the late 70s of the last century, we did not see the usual herring in Plauen's stores, only this one cut, in white mass and with onions and cucumbers. Somehow they did not dare to try ... especially since they were saving the currency.

And now it's easier - I bought the herring, cut it myself, washed it thoroughly, made the marinade myself, etc.

About German frugality - some authors advised to use the marinade more than once. That is, they ate the herring, and make it again in the same marinade.
I would not repeat this experience!
