Ratatouille on puff pastry

Ingredients

Eggplant 2 pcs
Zucchini or young zucchini 1 PC
Bulb onions 2 pcs
Carrot 1 PC
Bulgarian pepper 1 PC.
Garlic, spices, ground pepper taste
Olive oil 1 tbsp. l
Puff pastry 1 package
Quail egg for licking 1 PC.
Mozzarella 2 packs

Cooking method

  • We take the puff pastry, roll it into a layer, fold it in half, cut it into two parts and cut a rectangle in one from the inside. Put the bottom solid layer on a baking sheet. Lubricate the edge with squirrel and put the cut out blank on a solid layer. You can simply cut the strips, lay them around the edges, and twist them in the corners. Thus, we get small sides for our cake.

  • - Chop onions, red peppers, carrots and garlic, fry in vegetable oil, pepper and salt, if someone likes it, you can add tomato paste. (I don't like this option) Cool and put on the bottom cake.

  • Cooking vegetables (two options):
  • 1st option. Cut the eggplant into thin round slices and season with salt, let stand and squeeze the juice without injury. Do the same with zucchini.
  • - Then cut the tomatoes and mozzarella into round slices.

  • - Pepper all the blanks and lay out overlapping, alternating with each other, on the dough.

  • - Sprinkle vegetables with olive oil and sprinkle with some dry spices.
  • - Bake long and tedious, checking the readiness of the eggplant! Do not set the temperature too high, otherwise the edges of the dough may brown and the eggplants will not be cooked! Cover the top with foil or Teflon sheet if the dough starts to burn!
  • 2nd option. Lightly grill eggplant, tomato and zucchini slices (I have BBK). And then everything according to the scheme in option number 1. This option is much more reliable, since the dough and vegetables reach readiness at the same time, and less juice is released.

  • If you have a lot of garlic, you can make another substrate with the garlic stew. Simmer the garlic with butter in a frying pan until soft, mash until puree, pepper, salt to taste and put cooled on the bottom cake under the vegetables.
