Roll Herring on a fur coat

Ingredients

* Armenian thin lavash 3 pcs.
* Herring fillet 400 BC
* Boiled beets 1 PC.
* Boiled carrots 200 BC
* Boiled eggs 4 things.
* Red onion 50-100 g.
* Mayonnaise 200 g or to taste
* Greens (onion or parsley) 1 bundle

Cooking method

  • First, let's prepare the products:
  • - grate eggs on a coarse grater, then beets (in different cups)
  • - chop the carrots on a fine grater.
  • - cut sheets of pita bread in half (these blanks will go into two rolls, 3 for each)
  • We lay out the foil on the table, put one half-sheet of lavash on it and grease it with mayonnaise.
  • Next are the following layers:
  • - half grated beets
  • - the second half-sheet of lavash
  • - a thin layer of mayonnaise
  • - half grated carrots
  • - the third half-sheet of pita bread
  • - a thin layer of mayonnaise
  • - half grated eggs
  • Now we VERY neatly roll up the structure into a roll, because the lavash gets wet quickly. wrap in foil, tightly.
  • We do the same with the second half of the ingredients.
  • We put the packages on a cutting board and put them in the refrigerator. I leave them overnight. If there is not so much time, then it takes at least 30 minutes to stabilize.
  • When it's time to design our "Fur Coat", we cut the rolls into washers, about 1.5 cm thick. We put them on a plate with a cut. Lay out pieces of herring (or other salted / pickled fish) on top
  • Place red onion rings on the herring. Decorate with greens.

Note

We prefer our own, spicy, weak salting herring.
Salt according to this recipe:
* Herring / mackerel - 1 kg.
* Water - 1 liter.
* Salt - 2.5 tbsp. l. (I have a measuring one from a bread machine under the knife)
* Sugar - 1.5 tbsp. l.
Well, of course, a set of spices - black peppercorns, allspice peas (I crush it a little), coriander grain (knead it), cloves with buds, bay leaf.
I cook the pickle, cool it down. I put the fish in a container, fill it with brine (sometimes I add apple cider or wine vinegar if I want pickled fish). I put it in the refrigerator for 24 hours. If you like saltier, then you can hold it for two days.
It turns out very tasty fish.
Previously, the salt / sugar ratio was 3: 1 tbsp. l. Then she outplayed. we like it better.
Yes ... I clean the fish before the ambassador (I remove the heads, tails and entrails) - so it will be salted faster.

My additions:
- molded on cling film - it's convenient for me
- vegetables and eggs in bowls immediately mixed with mayonnaise
- lay the roll strictly seam down
- next time I will cut the pita bread, so that each next layer going inside is one or two centimeters shorter than the outer one.
