IvaNova, I added Japanese quince to the village, after defrosting there was a scent, but everything in the compartment was already mixed and something of its own, common, was formed Alla, you probably have a different quince, with large fruits - and it is sweet, and the Japanese is undersized and the fruits are sour with a tangerine-lemon smell
francevna
Alexei, we have quince with large fruits, but sour fruits.
Lyoshka
Alla, It is clear, but the leaf is still different, large (terry?). Japanese quince has smooth leaves
Natusichka
We loved the fruit and berry leaf tea! The only thing is that the grape leaves give a strong sourness, if someone loves it, it's just wonderful! And if not, then you can add it just a little bit, for the bouquet.
Ksu
Thanks for answers! I still can't really figure out the site. So do not "throw your slippers" if I send something wrong

Ksu, Oksana, we are white and fluffy! As straightened, and okay. We'll figure it out and won't pass the question.

Luda, tomorrow I'm going to go for a new portion of leaves. There was no fireweed in the previous mixture.
Now the question is: everywhere it is written that it is better to collect from a flowering plant (I now do not take into account the collection of autumn leaves), but our fireweed does not bloom yet
Collect from non-flowering and put in the general mixture or wait for flowering?
lappl1
Lida, you can collect Ivan tea for a long time. Young - it is special, very delicate and fragrant, easily processed. And when I wrote the recipe, there was no information about young Ivan tea anywhere. But our last year's experience showed that any Vanechka is good, even from autumn leaves. So feel free to take it. You can add 50% or more to the collection. I really love rustic tea based on willow tea.

thanks, Lyudochka for the advice,
I will outline
I will collect, God will give tomorrow
at least I hope to collect it easier than from apples and pears. When I was collecting at my site, my husband walked on his heels, so that nothing superfluous would be ripped off his land
They also suggested to me where there might be wild apple trees, I also go there for exploration.
lappl1
Lidochka, well done husband ... That's right, we need an eye and an eye ...
And nothing is easier for Vanechka - in 10 minutes you can collect a full package. It's a pleasure to follow him. And wild apple trees are cool! Tea is always the most delicious from wild game. And you can also go to the neighbors. Or to abandoned sites.
Well, Lidochka, good luck! Just don't overdo it. And then you will make tea for a long time - especially dry it. Take it in moderation. I know how difficult it is to stop when you collect Ivan tea. She always brought in too much, and then dried it until nightfall ...

I'll get old, though, I'm a lady "without brakes" sometimes, all the brake fluid flows out
and I'm going to dry it like this: at 100 degrees in electric ovens (I'm afraid it might burn out in my gas oven, I don't use it, although the main gas is in our village), and then above the gas convector in the kitchen (we use it as heating), though I don't know the temperature there what will be (mushrooms, tomatoes, all kinds of roots, onions, it's great to dry).
I will practice the technique
Lyudochka, I'm sorry that there is a lot of off-topic text, but I don't know how to use the "hide" function

I'll try, somewhere I've already met in your links
now I can not find a link to a device for rolling leaves, I saw it, but now I cannot find it
This morning I didn’t feel well and went for the leaves at five o'clock in the evening. But how quickly I typed
fireweed-660, apple-450, pear-250, irga-160, chokeberry-520 (but I put only 120 in the total mixture. I wanted to ask you what is the best way to do it: put everything out, or get and make mono tea from chokeberry?) and some blackberries.
I carefully studied the territory. Lots of wild apple trees, irgi and pine candles (though they are a little overgrown, but you can search)
I want to collect something else and try to do mono, but so far in thought: girl-q: there are more questions and wishes than strength.
Lyudochka, I try to read carefully,

but, unfortunately, I can't always concentrate, but tonight it seemed like enlightenment was

I tried to learn your lesson

Luda, I have another question.
Now I read the link on how to identify your mistakes. I read that fireweed does not freeze at all, but we have mixture dry or do you need to separately dry and prepare for fermentation individually? and then, when twisting, mix everything?
francevna
lydia, all the leaves are dried. But to freeze or not, choose for yourself. After freezing, the leaf twists more easily and the fermentation time is reduced.
It is better to ferment the mixture, even when twisting, try to take the leaves of different types in turn. This tea will be tastier and more aromatic.

Lida, I really like mono-chokeberry, but for some reason it doesn't work for some girls. I don’t understand why? Maybe we have a different variety? Try mono if that's enough. If not, then feel free to add to the mix. All the flavors there behave perfectly.

Different plants have varying degrees of moisture / "dryness". Therefore I always dried different leaves separately... Most girls do not bother about this and dry everything together. Fireweed, especially young, is very juicy, so it is better not to freeze it. Then he can give a lot of juice in a meat grinder. But by the end of summer, when the leaves are coarse, you can also freeze it. But in Derevensky you can freeze everything together after withering.
Lida, dry everything separately, and freeze and twist together, mixing different perfumes beforehand. Otherwise, what kind of mix will it be? Just a sheer hassle ... No, the joint twisting and fermentation is the very thing that makes any Country Super Tea.
Elena Kadiewa

space, Lida, well, you're big-eyed! Well done, you see everything - the eye has not yet blurred .... You are right, but in that photo all the leaves are dried together. This was my first village, I had no experience yet, but over time it became clear that it was better to dry the leaves separately. This is if they are dried open. If you wrap them in cloth, you can dry them all together. I'll edit the recipe.
You know, very few people come to this topic, although almost everyone makes Rustic tea in different variations. Everyone somehow unsubscribes about the mixes in the garden scent. And this Temka was almost homeless. And I would like them to share their best practices in different mixes. Well, okay, where it is convenient, let them write there. There is no inconsistency here. And if there is any interesting post, I, as a moderator recently, can copy it into this topic.

Lyudochka, hello!
As I promised, I bring here a more complete report:
1. There is no fireweed in my first "village" tea.
2. Composition: apple tree - 640g, cherry - 220g, black currant -200g, pear -130g, raspberry -150g, strawberries and thorns (together) -about 100g
3. Total weight of raw materials - 1440g, yield of finished tea -500g
4. In the process of preparing for fermentation, I used the hardening method.
5. Dry in two small electric ovens, fry for 20 minutes at 150 degrees and then according to the described scheme.
The result exceeded all my expectations, the tea was very tasty !!!!!!
in my opinion, the taste is dominated by a cherry note and it turned out to be very pleasant
I will continue experiments with tea, there are a lot of plans
Now in the freezer the second version of the "village", but with fireweed.
I will definitely report back.
Lyudochka, I shared my emotions yesterday, and now it may be rather dry, but in essence, it is easier for everyone to perceive the general picture of my work done.
Thank you so much, dear, now, at least 3-4 times a day I will remember you with a kind word: friends: and wish you all the best in life. And your admirers are growing exponentially every day.
Now imagine for a moment how much good and good you will have in your life !!!!!
Good luck !!!

One joy - fireweed in sufficient quantity
Thank you, Alla for your care and advice

lydia, I don't have cherries, in the first year I did a little, I took from the neighbors. There is nowhere to take this year.
Cherry leaves are the sea, it's a pity there is no cherry aroma.

Good day!
The question of fermentation of plant materials has fascinated us quite recently.Fireweed does not grow in our Stavropol region, so we order Ivan tea from Moscow.
But all kinds of garden trees and shrubs are full! Having carefully studied the topic, we collected pear, apple, cherry, prune, quince, black currant leaves for mono teas. Then, using the method of Zechariah, we prepared tea (large leaf). We immediately tried to brew tea from pear leaves, it turned out well. They left everything alone for dry fermentation for at least a month.
Today I have prepared village tea: 1) cherry-apple-pear-black currant-chokeberry; 2) quince-pear-prune-apple-black currant.
While hanging in a bag on the balcony. I made a granulated one, it took me an hour to curl the leaves, then I threw it and twisted everything in a meat grinder! )))
By the way, who does how to cope with sticking mass in a meat grinder ?? The first time I twisted it through a large grate, then I wanted it through a smaller one, everything was stuck tight ... It remained as it is.
The plans still include irga, plum, blackthorn and meadow geranium (if it has not yet faded).
Special thanks to Lyudmila lappl1 for the excellent description of the process, everything is clear and clearly explained! Also, according to your recipe, I want to make granules from cake from juice procurements, as the season goes on. Thanks for the idea!

Sonya Mitina, do not torment you with the second time! The first year I played on the manual and once, it was not worse from this.
Moreover, the dusty fraction (I, on the advice of Radushka, sift ready-made dry teas) is very good for brewing.

Sonya Mitina, Yulia, I twist on hand. When the inside is heavily tamped, I twist in the opposite direction. When the mass comes out, I begin to rotate again in the normal direction and then it scrolls easier and everything comes out of the meat grinder.
In general, I rotate back and forth from time to time

Yulia, to your health! Enjoy making tea and fiber!

By the way, who does how to cope with sticking mass in a meat grinder ??
Yulia, the best way is, of course, an electric meat grinder ... We bought one especially for tea. Served faithfully for 5 years with merciless exploitation. But a week ago it broke down - everything whole, except for one gear - led it, not to straighten it. And although I really feel sorry for her, I understand that when used for other purposes, she worked for a long time.
And on the hand one you need to put a little leaves, almost one by one ... But this is also not easy ... Nothing will make me return to the manual meat grinder. In the fall 2 years ago, feeling sorry for his email. meat grinder, I made tea from rough autumn leaves. I like autumn tea from garden ones the most. And then my shoulder broke down. Then it hurt for about a year ...

The plans still include irga, plum, blackthorn and meadow geranium (if it has not yet faded).
Irga and plum give weak teas, so you have correctly decided to make them in mixes.

Today I brewed a village tea for testing, which was made 10 days ago.
Country tea (fermented) - seven in one
This is the first tea with cherries in the composition
This is something, I can tell you. Even without dry fermentation, it is wonderfully good. Cherries give a completely unusual aftertaste. I can only guess how he will reveal his taste by January
Complete composition: Ivan-tea: currant: raspberry: irga: cherry.
Everything, except for Ivanushka - through freezing.
This is 50% of tea, the remaining 50% is willow tea of 25 hours fermentation.
Lyuda, I never tire of thanking you for inspiring me to such a wonderful activity - tea making
