Fermented tea made from leaves of garden and wild plants (master class) (page 89)

They came (or rather arrived on bicycles) from the "hunt"! We walked so well! Today we have the sun, 10-12 degrees Celsius somewhere. Children ran over. Collected quite a few acorns, hawthorn, pine needles. And the children also collected a large bag of cones, they want to try a Christmas tree from cones, they saw it on the Internet. I broke up to sample different coniferous branches. I wanted to pick more leaves on the way, but everyone was tired, I plan tomorrow. Later I'll post the pictures, maybe you know what kind of needles it is.
annnushka27
Ludmila, from green tarragon they make homemade drink "tarragon". It is brewed, insisted, sugar and lemon are added. But somehow I'm not going to try to cook everything.

Collected quite a few acorns
Anya, try to make coffee according to the mistletoe recipe. Anyuta (thanks, Anyuta) brought me a ready-made one, because there are no acorns in our village this year. I really liked it. If there were acorns, I would have done a lot.

And Lina knows everything about the needles. She has a lot of different things. I made tea out of everything.
annnushka27
Ludmila, so I have noted for a long time at Mistletoe, I've been drinking for a long time already
lappl1
Lucky! And we have no acorns ... But at least Anyuta pampered me ...
annnushka27
We don't have it either ... Since my last race, everything was cleaned up well.
I have a few questions.
To add hawthorn to teas, you just need to dry it whole and that's it?
Freeze pine needles before scrolling? To pick up a narwhal, and then I don't know what to do. I also want to cook pine + rosehip jam. Believe it or not, I just saw Lina's recipe yesterday, I was upset that I was late, and then I read on the Internet that it is possible with needles, albeit in winter, but I want it now, all the more there is a lot of my rosehip.
lappl1
Anya, we have no hawthorn here. I remember him from my southern life. It keeps very well fresh in a cool place. I loved it so much. very useful ... But it will not last all winter. Therefore, you can dry it.
And the needles do not need to be frozen. They are unlikely to freeze. However, I don't know how to twist the needles yet. I haven't gotten my needles yet. I have to ask Lina.
annnushka27
Lyudmila, Lina wrote that she seemed to be twisted, but she did not write whether she froze.
Here, I found it.
Quote: Linadoc

Anya, I fermented and fermented conifers, a week ago I fermented pine and cypress in addition to other teas as a natural bronchodilator and antibacterial agent. Calmly scrolls and ferments for a couple of hours, but the smell does not change much. I think that antibacterial substances prevent fermenting bacteria and yeast from developing on conifers. But since this is tea, I ferment it. I add it to other teas, I like the aroma for medicinal purposes.
lappl1

Lina wrote that she seemed to be twisted, but she did not write whether she froze.
Exactly ... I somehow missed about twisting. Anya, I don't think we need to freeze. I twisted juicy pine shoots. They were wet, but dried very quickly in the dryer. But the needles are much drier. After all, why do we freeze the leaves? To make the leaves twist more easily. And needles are not leaves. We have frosts for 30 * in winter. And nothing is done to the pines ... And in the freezer there are much less degrees. So the meaning of freezing is lost in the case of conifers.
annnushka27
Ludmila, and will you ferment pine?
annnushka27
My electric meat grinder also broke down, tomorrow I will try it manually.
lappl1
Quote: annnushka27
Will you ferment pine?
Anya, no, I will not. I really like the unfermented pine. Yes, and Lina is right ... It is difficult for the fermenting bacteria to combat the properties of pine.
Anyuta73
Girls, today I had a good time. She pulled out strawberry leaves from my mother-in-law from the freezer (it was warming a week ago and she cut a bag for me), and while she was pulling out, I found another bag with all sorts of things. Apparently after my departure, she peeled off all the remnants of the leaves that she could find in the garden (cherry, sea buckthorn, apple, currant, raspberry). Well, my joy knew no bounds. I took out everything and decided to put it into action. While everything was defrosting, the smell was simply stupefying. Every time entering the house from the street, the husband said: Oh, how delicious it smells ... So today I put rustic and mono strawberries for fermentation.
Even today I ran into the forest and plucked pine needles. I twisted everything (by the way, they twisted very well) and decided to try to ferment for an hour or two, I’ll conduct, as they say, an experiment. Unfortunately, I don't have an electric meat grinder and I had to turn it all by hand, I feel the cost will be "without a hand". My son always helps me to twist, but this time he stayed at home .... study, so I had to do it myself. But I think tea is worth such sacrifices)))

I really like unfermented pine
Lyudochka, I read today that the time to collect pine needles is winter and late autumn, so there is still a lot of time ahead and you can try to make both fermented and non-fermented.
And your gull (pine shoots) just pleased me - both the taste and smell. Thank you dear
lappl1
Anya, you did it all the same! ... But I have not grown together with the forest-needles ... Nothing, I still have time. They promise still warmth.
Well, tomorrow I'll run to you to look at the pine tree ...

To your health, Anya ... Indeed, healthy tea ...

To add hawthorn to teas, you just need to dry it whole and that's it?
Anya, I have a store-bought black tea with hawthorn, there are just dried whole berries.
francevna
My last batch of tea is now finishing drying, I wanted to make mono-teas, but I was too lazy, so the apple and cherry will be together.

Tarhun and hyssop grew in my Blagoveshchensk, added to all pickles and marinades. The greens were simply dried in the shade, helped well with coughs, especially hyssop, relieved asthmatic coughs. She brewed tarragon with boiling water, cooled it, added honey with lemon and drank it chilled, it turned out to be a very tasty drink.

This is how it all looked when twisted (my needles)
Fermented tea made from leaves of garden and wild plants (master class)

Now I'm dry.

Alla, there, probably, you still have not all the leaves have flown? And we only have needles left. And, no, there are still red rowan berries. I made a couple of jars of jam three days ago. Bitter. but I like...
Anyuta73
Well, in summer, leaves, and in winter needles. Tasty and healthy ... and more ... nothing else is left anyway

Luda, I missed .. what. are we already collecting needles ??? What does it taste like ??
Yeah, we discussed yesterday and today ... Lina did both in the summer and now. And I in the spring pine shoots did, after Lina's pine-rose hip jam. Well, I have it on the 1st page of the recipe (with a photo). I don't even know how to describe the taste. The smell is pine, but not obvious, not harsh. And the taste is so fresh. I love. I have not made needles yet, but I plan. They are very useful.
lappl1

Anya, well, very similar to my shoots. When dried, they brighten.

Ksyusha, I did not drink tea from one pine tree. I added a little to "Village".It turns out great.
Omela
Oooh .. you won't die of boredom !!!! I'll go to the dacha, pick up the needles. but how to tear them?
Anyuta73
Quote: Omela
What does it taste like ??
The taste and smell are not very intrusive. Light pine taste with a taste of vitamin C. Very cool. The color when brewed is white, almost like water, but this is not reflected in the taste and smell, so if the color is embarrassing, you can add it to other teas.
lappl1
That's for sure .. We'll find something to have fun with ...
Quote: Omela
but how to tear them?
Yesterday I asked Lina this question. Here's what she replied:
Quote: Linadoc

And I don't hold them in my hand, I put a bag on a branch, stuff my hand into it, draw it over myself, the needles fall into the bag.
And Anya collected today. Anya, how did the needles get together? Have your hands severely punctured?
Anyuta73
Lina collected this:

I put a bag on a branch, shove my hand into it, draw it over myself, the needles fall into the bag.
And I just took a branch in my hand (in the left), and plucked with my right. True, I was wearing gloves.

lappl1, Luda, well, try is not torture, they always drank dried tarragon, now I found out about fermented tarragon, it's also useful, in knowledge.)))
annnushka27, Anya, I like fresh tarragon in tea, dried does not give such a strong aroma, but in winter I will have to drink dried. Although if it gets confused, then you can transplant it into a pot for the winter, but you don't want to. I didn't know about the medicinal properties of tarragon, I was not interested, thanks for the info, I just thought and read about cooking.
I will share where I use tarragon, maybe someone will come in handy.
We open the barbecue season in the spring - fresh, juicy tarragon greens in a bite with juicy meat ... mmm., Such a delight.
Summer - in salads, especially with cabbage.
Refreshing drink: water, sugar - boil, throw in lemon slices and tarragon sprigs, turn off, cool. Of course, it doesn't look like the Soviet-era store-bought Tarragon, but it's also delicious. But how to cook something like this, I don't know what the secret is. The factories used a natural product, probably somehow they made an extract from tarragon. By the way, if you grind tarragon with sugar and leave for a few minutes, then the taste will be stronger.
For preservation: cucumbers, salads, compotes. For red compotes (from strawberries, cherries, raspberries), you can not translate tarragon, they clog it with their taste. But apples, apricots go well with it. But the most bombastic gooseberry and tarragon compote.
When preparing meat, I use it both for marinating and for cooking.
And of course, in tea, I often drink black, but I also added to green.
Luda, forgive me for clogging up the topic of tea, I just wanted to share, few use tarragon.
lappl1
Elya, say too - "clogged" ... How many interesting things I learned! Thank you very much . We must plant this tarragon. It always seemed to me that this is a thermophilic plant. Interestingly, will it grow with us?
Elya_lug
Lyuda, we need to plant! I think that it will grow in your area too. We have a steppe, in summer the heat is +40, in winter -30, until the bushes froze. You can buy seeds and sow, but there is a lot of trouble, because you need to first seedlings, and then plant them in the ground, but it doesn’t take root well. Therefore, the best option is to plant a bush with a root. An employee gave me, he brought it many years ago from Vladikavkaz and put it in the country. Then I "went" from hand to hand, now almost all of my friends have, and I dug it out at different times from May to September, it takes root well, the main thing is to water.
Anyuta73
Another hour and I'll put the tea to dry. First in the oven, and then I will put it on the stove and leave it until morning. Let it dry.
lappl1
Midnight Girl ... However, like all of us ... yours are already asleep, probably ... Well, nothing, the smell of tea will wake them up ...

They were going fine. She held the branch with one hand, and cut off the needles with the other. I tried to pick fresh, young shoots. Some, together with escapes and broke off, I will rip off tomorrow, before twisting.
Anyuta73
They sleep without hind legs .... and I sit in the kitchen, quiet as a mouse .... until the oven starts working So wake up not from the smell, but from the monotonous hum. It will be fun

Elya, boom look .... And then I have only dill, parsley, cilantro and celery from spicy herbs. Disorder! A useful variety must be introduced. Elya, thank you very much for the information.

Yeah, quiet ... I have a mouse scratching somewhere right now. And not at all quiet ... Even Mishka woke up. He caught 2 pieces today. And Lizka, an infection, is asleep on the stove, she won't even move her ear.
Anyuta73
The needles are really well assembled, the main thing is to pull against growth and beauty when taking off.
Anyuta73
Quote: lappl1

I don’t understand .... but why are you feeding Lizka? Why doesn't he catch mice? Reprimand her from me
lappl1
Oh, we inherited it like that. T. Nina took the Pisklya mousetrap with her, and left this parasite for us. Doesn't catch mice at all ... And when she wakes up, I'll reprimand her from you. But everything is purple to her ...

Yes, only I didn’t think of taking gloves, my hands were all covered with glue, and on the way home my son's chain slept twice on the bicycle, and I put it on for a long time and then washed my hands, but I’m not used to it, I’ve forgotten about a beautiful manicure for a long time. But I got so much pleasure! I am not a city dweller at all, I envy you that the forest is nearby!

It's a pity that the shipment is expensive, I would send it, we throw out the tarragon every year, it grows strongly. But now you can increase the number of bushes ... I know what to do.
Maybe in the summer someone travels to our region? I would. We have medicinal mud, sanatoriums, a lot of people come here. And not only in summer.
lappl1
Anya, well, yes, there is also resin ... And I'll take a bag, and gloves.

Yes, the forest is something! I still can't get enough of this beauty.

I live almost by the sea, 5 km. from the sea, but indifferent to it. I only go there because of the children. And the forest is something for me !!! I would wander around it all day. And there is no forest nearby, only steppes!

It's always like this, we need what we don't have. My friend lived in the Crimea, Saki, and so I just go crazy without the sea, and every summer she lived, but she was a lover of mushrooms and berries, so she came to me in the fall, just in the mushroom season. And where there are mushrooms, there are lingonberries and cranberries ... So they saved each other until she left for Ireland for permanent residence.

Lyudmila, tarragon, aka tarragon, grows well in the middle lane. And you can grow it from seeds, they are sold in any seed department. By the way, I've been ordering seeds in an online store for two years, first I'll analyze it for a couple of weeks, and then order it, in December, and then sort it out before the season starts and I'm happy ... Oh, about tarragon. In a couple of years it grows large, it is perennial. I once planted it on six bushes, now they protect the garden from the wind. I put sprigs in cucumbers, tomatoes, zucchini, squash. My sister comes and cuts for drying, then adds greens to the marinade for meat and fish. And for kebabs.
Well, yes, if you only mix bird cherry with an apple tree, that one has a neutral taste, and the bird cherry has a yellow color. It is also possible with plum, also the taste is dim.And we have a lot of plums, but there are no fruits, and you will be tired of twisting the bird cherry on a leaf ... Let's try, it remains to wait quite a bit, some six months ...
Elena Kadiewa
Damn, while I'm away, they are already making tea from tarragon and their needles, we cannot go to the forest, bears, yesterday there was a warning again on the local TV, they are already walking in the park zone, but this year I planted tarragon from seeds, dried a little green, the bushes are still tiny. I’ll see how they spend the winter, they promise a cold winter.
