Radushka
Alla, I'm not fading. But I think you can't spoil the withered
Elena, my aroma and taste are like unsweetened raspberry jam. The color is light at all. They were allowed to drink tea as a diaphoretic. Worked great.
francevna
Radushka, Anya, this is how I missed this moment, I thought that withering is a must everywhere. After all, how much stewed raspberries could be made

Radushka, is it green tea?

Light, green probably because the languor is at a temperature of 30-40 °, but here the foliage goes through a withering stage.
Have Radushka, languor at + 60 °

Alla, green, because there is no fermentation, I simmer at 70 grams, this is the pace I have on heating.
And as in the recipe, at 40 grams, there is also no fermentation.

Hello everyone!
I read you, and I understand that I'm probably just lucky! I make tea as it is, adhering to the basic rules, and it turns out! I don't bother too much either with time or weighing. True, sometimes such a thought creeps in to try your teas, and suddenly I have mediocrity! Although friends drink and praise.
By the way, when I made it from raspberries for the first time, according to the recipe, through fermentation, I was not at all impressed either. The grass was, the grass remained. She also made, in a fit of zeal, 3 three-liter bottles! Now I add to the mixture, it gives a good color. But when the steamed man did, then this very smell of raspberry jam appeared! Now that's the only way I will.
By the way, I already wrote, I will repeat it again. I mix the finished tea with cutting from the drying: pear, apple, cherry, apricot. Finely cut the finished drying. Looks like expensive tea with fruit pieces! Gives fruity taste, sourness and aroma. Now Radushka will say that this is not tea, but compote! Well, this is not for everybody!
Apricot drying is cut very hard. I decided to try to twist it in a meat grinder. She walks very hard, sticks, I probably won't torture her. But the result amused now and I will show you

Radushka, what is the best way to mix basil? And can it be frozen? I want to try making seagulls with him.

francevna, Alla, I languished without withering on the heating program. There, in my opinion, 60 - 70 ° C.

Nadyushich, Light, apparently from the heat the head does not understand. I didn't notice that there was no fermentation ...

ud-but.

Lasto4ka, Sveta, I also don’t bother, I don’t weigh, I put leaves on the eye from what is. I just make sure to dry them. The last time I do it through the freezer according to Zachariah. Fermentation time is the same by eye, I don't smell anything. Now I only add stewed raspberries to the mixes, it tastes better. And the basic recipe gives a lot of imagination. And the teas are delicious and everything is different, since the composition changes every time.Right now I went to experiment with alder mixes, a very interesting aroma, and what else will happen in a few months ... And Lina is preparing some other surprise ... I'm sure it's also delicious ...
Yuri K
Yesterday I combined ardent competitors in taste and aroma, and it turned out to be an amazing drink! Nonsense, cherry could not beat the taste of currant leaf!
The color of the tea leaves is weak, but cute, perhaps the pear leaf still corrected this defect, otherwise it could have turned out to be straw, not expressive.
Currant 50-60%
Cherries 30-40%
Pear 10%

Lasto4ka
Yuri K, I admire your experimental spirit!
And I have no desire at all to try all sorts of different options, I have enough village. Although I got a little currant. I thought to try with an apple tree, and now I will think about cherries))
By the way, this is the question. I make all the tea in a meat grinder. And if you add steamed raspberries to the collection, then ferment it with the rest of the leaves after the meat grinder? Or twist the main collection, ferment, and then twist again with steamed raspberries?
Yuri K
Lasto4ka, Thank you! I'm just interested in different ingredients, they also give different shades of taste
I think by the steamed leaves Iris here special, I do not soar. In general, it seems to me
Quote: Lasto4ka
twist the main collection, ferment, and then twist again with steamed raspberries
because the "steamed" leaves, as it were, have already passed part of the process, using a slightly different technology.
Lasto4ka
Yuri K, so I'm kind of inclined to this option, but decided to clarify.
I'm waiting for Radushka ...
Yuri K
Lasto4ka,
Likar Nadiya
Radushka, thanks for the explanation and repetition for those in the tank)))) last year I tried to make steamed mulberry. I collected a few leaves, and soared it in a small clay pot on the edge of a burning stove (my father-in-law was preparing a 40-degree, and maybe more, drink). How long she languished there, I do not know, but as a result, good green tea, mulberry is not read even close.
And I will try with a slow cooker))) can you put more than one package and not only raspberries?))
Eugene
Lasto4ka, Svetlana, I'm also wondering if basil can be frozen and with what it is better to mix it. We are waiting for Radushka ...

I cut exactly two burdock bushes (large burdock), three minutes for everything about everything ... And I followed it for 40 minutes ... I will experiment, after drying, I cut it and tamped it into a jar (as some do), if I throw it away it will not be a pity

Likar Nadiya
Yuri K,)))) I wish that garden leaves were the size of a burdock)))
Yuri K
Likar Nadiya, yeah, and the percentage calculation would be easier. 20 apple leaves, 10 pears and 5 currants per batch of tea
Folk art of the "checked professor" somehow happened with these mugs. While I was cutting thick veins from the leaves, I almost finished. Burdocks are not shorter than such care, even if something turns out from the leaf mass
Radushka
Quote: Lasto4ka
Now Radushka will say that this is not tea, but compote!
I added basil (lemon and caramel) to the apple-pear-raspberry-strawberry mixes. Went great! I do not know, however, how and what will come out during long-term storage. We'll see.
I didn't freeze the basil. But, I froze lemon balm and mint, and simple lemon balm. I don't think basil is any different from them. But, frozen withered

Likar Nadiyaof course, you can put whatever you want! The cartoon is valuable because it keeps the temperature perfectly and turns itself off when the time comes.
Mulberry, indeed, does not have any obsessive taste-aroma. What is valuable, I think.

I'm waiting for Radushka ...

What are you all waiting for me?
I did it anyway! I have a lot of twisted steamed raspberries. Perfectly can be added to any usual rustic mix already dry! A very strong raspberry flavor and aroma and a complete absence of berry acidity, which bothers me so much in "compotes". You can also make hybrids, as they wrote here. Guessing the end of fermentation and chaps. And twist together before drying.
Lasto4ka
Well, I just wanted to show off the leaves, but you have already written about burdocks and burdock leaves! Some kind of collective thinking!
Today I went to the neighbors to pick an apple tree.Leaves, of course, which surprised everyone very much)) And the burdock apple tree is just a dream!

Yuri K, I went to Bashkiria for the weekend. what I want to say - the fact that there Ivan-tea grows like a weed right everywhere is a myth! drove through the Oktyabrsky district up to Meleuz - only plowed fields and burdock. along the streams full of derbeinik - confused us! and there are alder trees there! we met a thin stream 20 centimeters wide, and around dense thickets of alder!
we talked with one grandfather near Meleuz - he says that this year they have problems right with the brick. where last year I collected very little this. probably he didn't like such a rainy beginning of summer ...
we found only one place - we cut a small armful. and that's it, there is no more Ivan-tea ...
Yuri K
sweet_blondy, the weather is hardly to blame. Fireweed hunters have grown in earnest, more often they do not do it themselves, but just grass for sale. I have received more than one offer to buy from them, and the market is full of salespeople. Recently they took off a photo from the Chelyabinsk region - the sea is fireweed, no weather has affected. In any case, you need to know at least approximately where it has grown, of course it does not grow at every step.
sweet_blondy
Yuri K, yes it may be so. it's just one thing when next to a populated area - there naturally everything will be collected, and another thing is to go into the wilderness ...
we spent the whole Saturday traveling. wherever they stopped by, wherever they looked, it was a shame to the point of tears - they drove far ... they even found oregano and St. and I looked at the shoots - someone already in this place plucked shoots. and I gathered young, short, but already blooming. I remembered the place. but I want to go again. you just need to find a gunner ...

Hello tea makers! I haven't come in for a long time, I'm mired in restoring my health, only recently I returned to tea.
I finally discovered a sucker not in the city and not along the roads, but in an open field. I went with the dog to the river and it turned out that it was full of these trees. Do I understand correctly that he has such kind of thorns or thorns on the trunk? Is it more correct to call it thorns? Until I typed it, please answer so that I understand it or not.
At the same time I found wild pears in the same place and already a bag of narwhal and wilted with the addition of a cherry leaf.
In the freezer lies. Yesterday I processed what was previously prepared in the freezer. Large quantities of currant and strawberry leaves. On the electric meat grinder, the next and last adapter was covered so that I cut it with a knife as small as I could, but all the same, the volume came out colossal. She was cutting all wet, we have a fever over 40. Yesterday I was driving the oven all day to dry it all. Looked at a 1600W Philips meat grinder, do you think it is suitable for tea?
And in the same place, on the river, I found rare specimens of Ivan tea, and here you write that it might not be he, but a loosestrife. Now I doubt it. I need to take a picture next time and show you, I decided that this is not a very large Ivan tea, very similar.

Allochka, he is. Little silver olives are still on it. And the leaves are straight thin, narrow, and there are wide, and all on the same tree. And small silvery scales all over the tree.

It also smells not very pleasant, not the same as that of fruit trees. But in tea it gives a cool aroma!

And froze, and defrost, and fermented, the smell did not change in any way as the color of the leaf, nasty.I put it in a couple of mixes (do not throw it away), the glory of labor, although it did not show itself rejecting in teas, was not noticeable)) I put a cross on it for myself Well, except that during flowering - then no doubt, awesome aroma!
francevna
In 2014, the sucker was collected during flowering, the tree stood on the bank of the river. The tea made a leafy, delicious honey aroma, but not immediately, but after it had stood for three months.
In 2016, there were already olives, I collected them in another place. The tea was made in granulated, for a year now I have been making tea, but the aroma is barely felt.
sweet_blondy
I have in my freezer the sucker collected during flowering - leaves with flowers. smells very nice. mono did not. only in the mix. in general, a pleasant aroma, only there are so many smells mixed - and you can't figure out where which)

Guys! I DID IT! Alder tea mix!
Alders -40%, strawberries, raspberries, currants, apples, the remaining 60% in equal parts.
The brewed one turned out to be slightly opalescent. I think it's because of the variety of my apple tree. I noticed that summer varieties give a light haze. Excellent tea color, slightly reddish, aroma-taste-astringency-light bitterness-excellent aftertaste!
In short ... Whoever lacks in OUR teas those qualities that are in the "black shop", you can / should make an alder mix!
py. sy. My alder is black. We haven't looked for the gray yet
sweet_blondy
Radushka, ah, opalescent is how?
I'll take your proportions into service! I think in 2 weeks I will go on vacation - I will definitely pick up alders) otherwise she is directly pursuing my trips, but I have no strength left for her)
tormented or as usual did?
Radushka
sweet_blondy, Zhenya (but what about the all-knowing GUGL?)))
Opalescence is a slight non-settling turbidity.
I will not add any aromatic herbs to this mix. I will brew for those who "I only drink black!"
It will only be necessary, as the heat passes, more alders and a wild apple tree instead of my summer culture. And it grows nearby, but it's very hot here now.
Made according to Lina's recipe, that is, fermented and twisted twice in a meat grinder.
I will not soar for sure. I really missed the collection of "black tea". I'll try to make another one with a pear

I want to pick up leaves in the evening so that I can steam up early in the morning.
Please tell me how best to save - let the night wither, or put it in the refrigerator?
Radushka
Yuri K, it is worth expanding the range of search. You don't need to add any geranium. It's quite such an elite black ... (Two top leaves, plucked by virgins at dawn)

Podmosvichka, Lena, I, too, have all the sage faded, it’s even uncomfortable now ... The heat kills the foliage, but we always do this, before haymaking we enjoy green landscapes, after that everything is yellow straw, the whole steppe ...
In my recipe, I now know for sure what sort (type) of sage I use.But with geranium and alder - it's a complete trawl, within reason there is no near the city (((

Oh, I have some kind of garden mint, they brought in an armful, after standing it began to smell slightly of dried dill, I'm in afiga!
Radushka
Yuri K, then your raspberries do not smell, then mint smells like dill! Something, Yuri, is wrong with YOU, isn't it?

Yuri K
Radushka, no, it seemed to you. About raspberries, I was not the only one who wrote this, who does not read her all the "not"?

P \ S: added mint to other tea - everything seems to be fine, pleasant taste, although there is some dill note in the dry smell, fermentation sometimes brings strange things
