Fermented tea made from leaves of garden and wild plants (master class) (page 326)

Lind @
I tried drying it in a pan. Last year, none of them roasted tea, but here I took a chance. Made a strawberry leaf. Until I realized WHAT happened. The smell is not very pleasant. But, I hope, it will lie down and be better.
A separate issue for storage. Do you think the zipper bag fits? they are very comfortable. And you can almost make a vacuum. And put flat in the box.

Maryanne, the apple tree was the first and without freezing. It was night. All the following - with freezing for 1.5 hours. When the smell is strong, it is ready.

the apple tree has color, but there is practically no aroma, it also needs to be done with something.
Maybe yes. But it is most like tea. I smell like a baked apple.

How will he pick up !!! Don `t doubt!
Today I tasted it, everything is not so bad. But! The bouquet (taste) disappears from the granulated, perhaps it will appear after dry fermentation. Twisted in a manual meat grinder without a knife and slightly rubbed by hand, it was with a bouquet of taste. I had the same effect before when I made granulated and grated pear and cherry separately. It is strange why this is so.

I sent apple leaves with dark leaves to the freezer, The fruits inside it are red. I'm thinking of doing mono, should the color be dark, or rustic? Maybe someone tried to make from such an apple tree, please respond!
Light
Lutik, Ninaif there is an opportunity to do both mono and mix. Try whichever you like best. This year I have a tea mixture: pear, cherry, plum, apple.
Lutik
I'll try this and that. Painfully the leaves of the apple tree are interesting! and they smell strong.

Lutik, do it! Do different things and do a lot, all the same then it will not be enough!
Radushka will confirm what a toad grows by the spring when the tea ends!

Hello everyone! I found this forum on the Internet by accident, but it became so interesting! Straight on fire to make your tea! decided to try with cherries. already done 2 times. both times the finished tea turned out to be dark in appearance, with a very pleasant sweet smell, but for some reason it is brewed like grass (((very disappointing !! the infusion has almost no color at all, but it smells nice, the taste is a little astringent, but also pleasant. now we drink it only with black.
Please tell me why this could be? what to do?
I don’t like mono cherries in color, but the taste is harsh for me, but I really like apple tea 60-70% and cherry 30-40%, and I also really like Ivan tea with cherries in the same proportions, and, in general, cherry mixes greatly improves taste and aroma.

Apple tea has a very beautiful color! But she lacks the aroma, so it is good to mix it with pear, cherry ... I wrote above about my favorite apple-cherry tea.

Olga, I've only kept them in them for three years now. They suit me and Radushka wrote that she also stores in such packages.

And I store them in plastic containers, as Luda showed somewhere. And it is compact and the sizes are different and it is convenient to present in it.

"Zechariah's method"

And "Zakhariya" is concerned, by defrosting freezer we try to remove excess moisture after drying (50% remains) and bring it to an optimal level of at least 20%. "When the moisture content of the biomass is over 20%, water completely fills the cell volume and functions as a continuous medium. Under these conditions, the cellall enzymatic processes can proceed freely "
The optimal level will be different for different colors, but in mixes we simply average it.
Therefore, the reverse "freeze - defrost - fermentation (50g)", and even more so in cycles, I doubt the advisability of its use in this form in the process of making tea.
You have to be more careful with the method, for information-
"When freezing cells, especially slow, large ice crystals are formed inside the cell, which can cause damage to cellular structural elements. Therefore, cells it is necessary to dehydrate or freeze so as to prevent irreversible changes in them, otherwise a lethal condition occurs - death, not suspended animation.

the zipper bag is suitable?
Multilayer bags have long been used for packaging a variety of food products, and other products where necessary tightness of packaging and special barrier properties.
there is even a pocket for pieces of paper with a description - convenient

vlek, I will not argue with you about chemical processes, but Linados does this by this method, and you cannot even suspect her of illiteracy.
In principle, this method is used when there is no time to carry out a full cycle of withering-twisting-fermentation, and the results are praised.

when the package lies in the sun (by the way, do we often have 50g?) - one, in the oven at the same temperature?
As for me, these are different things, therefore I expressed my doubts about the advisability of a high temperature, but there are no complaints about the method of getting rid of excess moisture, I successfully use it.
IrinaSakura
vlek, I do not argue that lying on the leaves in the sun and holding them in the oven at 50 grams are two different things. Nevertheless, I thought that the sun warms up the bag quite strongly and it becomes warm in the bag like in a greenhouse. So I put it in the oven. And in the oven at least 50 grams, so I heated it up, turned it off, put the bags with the door ajar. Unfortunately, I do not understand the ongoing processes and why it is necessary to alternately freeze and thaw.

Hello everyone, everyone. I came across a Temko and how cozy and warm it is. Small report. There are a lot of tops on the apple tree, which used to annoy, but now I was very happy about them. I cut it off, plucked it, wilted the leaves, put it in the freezer overnight. In the morning I began to use a manual meat grinder, but it’s hard, I can’t ask my husband to twirl, because he has sore joints (rheumatoid arthritis) and took out an old electric meat grinder at the price of Soviet times 38 rubles. I carefully began to rotate and it seemed to me that the granules were loose. When I began to try them a second time, it turned out to be porridge. I decided to try the first granules with leaves: a few leaves and a little rotated granules. The granules have become stronger and there is no porridge. Set to ferment. 9 hours passed, but the smell did not change. At the dacha, the room was 26 grams. Then she started frying for 20 minutes and then reduced the gas and dried it as required. The oven was gas and the temperature was done by eye. Smell without any special notes. The second batch is in the freezer and I want to try it according to Zakhariya. We are waiting for the outcome.
Lyudmila, thank you for such a competent, understandable recommendation for tea. Everything is very accessible and understandable, you just need not be lazy and read carefully

I, Larisa, am a beginner in this business and all the nuances are important to me
I don’t know how many times you need to freeze mono leaves, but Zakhari, it seems, not 1 time
I had a mixture of leaves and froze it 2 times and then defrost it and defrost it before scrolling, but in less time

When I began to try them a second time, it turned out to be porridge.
I dare to assume that the leaves were not thawed enough, and also advise to change the grinder grill during the secondary rotation to a smaller diameter (this is what Lyudochka and many more experienced tea makers advised)
I was helped by the option of reducing the diameter of the holes to get decent granules
grateful for all the advice

The diameter of the holes in the grille is average, there is no smaller diameter. Maybe the leaves wilted a little or really didn't quite thaw the leaves and the secondary scrolling gave porridge, but scrolling with the leaves and primary granules turned out to be very decent worms. This process is very addictive and I want to try and try.

Can you please tell me what teas can be made mono? otherwise there is not much experience, I do not want to mix something and spoil both teas ... and another question: do you need to ferment mixed teas and ferment together? or are they already mixed dry?

Light, I did so, only in the freezer the leaves lay longer for the second time

due to the circumstances

it's okay, Larisa, it's simple

you select the desired author's text by pressing the left mouse button and do not remove the pressed finger until you reach the end of the selected phrase. You raise your finger. And then you bring the cursor ("arrow", which will turn "into a palm") to the phrase in the upper right corner "quote selection" and click again with the left mouse button. Everything, your text, will already be in the answer that you write.
I am also a pensioner, but this is not a sentence, we will study together

axel23, and what does the oven not suit you? The fact that you need to fry at 150 ', and you have less? So fry for 140, but not all teas need this temperature, currants 80 '.
The petals are not fermented, but simply dried at a low temperature. What exactly doesn't work?
We make TEA, and do not dry medicinal herbs, and during fermentation, the medicinal effect disappears or decreases. And taste, try the compositions, experiment, but the main plants are written here.
Do this and that, what will you like?
Lutik, Nina, welcome to the Tea Club, we are very glad to see you, all the more, already having tea!

at the expense of the oven. I have more than 140. and not less. therefore it is in the pan. and the question is how to dry properly in a pan

how to dry in a pan
axel23, "We take a thick-walled frying pan, turn on the stove for a C grade (I have an electric stove) and pour the future tea in a layer of up to 5 cm. I spread it high on the walls, because it is noticed that the tea dries well on the walls. The raw material immediately becomes wet, even starts to "hiss", I do not leave, I try to break all the washers, I turn it over every 2-3 minutes. So my tea dries for about 10 minutes, no more, then I reduce the temperature, turn on the two. Again, I do not go far and for a long time, periodically stir, when the moisture evaporates, then I stir gently with my hands, and then I feel whether there is moisture in it or not. When there is practically no moisture left, then I switch to one, again sometimes I mix. With this method of drying, you feel the whole process with your hands and gut, do it a couple of times and you will understand everything."
Elena Kadiewa
Babovka, Olesya, in the dryer-in the sense-in the dryer?
I never dried it in a dryer, I tried everything - an oven, a frying pan, an airfryer, and stopped on it. After all, the temperature cannot be set high in the dryer, and the tea must first be "roasted", and only then dried to dry granules and dried outside in a bag.
filirina
Quote: elena kadiewa
and the tea must first be "roasted"

The question of frying is a matter of taste! Who loves gulls of vigorous, such as black, but frying is necessary. And we love seagulls softer, closer to green, so the dry land is exclusively in the dryer and I am very happy about this - and the taste and the cleanliness of the process!

Until they dry! Only the pallets should be rearranged and periodically turned off, and then turned on, so that the moisture is evenly redistributed over the raw materials. Well, drying is not necessary. I am right in the pallets and leave it to stand for another week.

Girls, good evening! We tried our first tea today after dry fermentation. Ponraaaavilsya from mono cherries !!! The color, of course, turned out as you wrote before, not dark .. but the smell and taste are very ... As for my taste, plus I try this for the first time, then one and a half teaspoons per 550 ml is too much ... it turns out too saturated. But re-brewing is softer, with a full range of flavors and aromas. I came to the conclusion that mono-cherries are enough for me for such a volume of one teaspoon ... although I must try again. I haven't tasted the mix of mulberry, cherry, apricot, rosehip yet, I have left myself a holiday for tomorrow.
Thanks to everyone, girls, who so generously shares their rehearsals, secrets, advice, observations.
Tomorrow I planned to make a mixture with the addition of berries (strawberries and black currants). After reading about the preparation of tea with berries, the question arose .... We buy bananas, their skin is plump and with a pleasant smell. Have any of you girls tried adding them while twisting the mixture after defrosting? And if you tried it, did you freeze the banana peel after drying, or how did you twist the berries right away?
Today my husband decided to buy some bananas for the cottage cheese, and while peeling it, even with a stuffy nose, I caught a very pleasant smell from the peel. What does tea mean already in its full manifestation? Not only the eyes are already looking for leaves, but even the sick nose has already connected to this process in full measure.

lara55
space, lydia, thanks for the citation consultation, but went to the gazebo, because I did not understand some of the details so as not to clog the topic.
I pulled out the second portion of leaves from the freezer, thawed it, sniffed it, the smell is very pleasant. I put it back in the freezer, defrost it tomorrow and send it to fermentation. Let me compare the first batch and the second.
francevna
Borkovna, Elena, nobody has ever made a banana peel. Personally, I'm afraid to do it, because bananas are processed with something.

Girls, good evening! Please help who is online now! Even at 10 am I twisted the leaves into a meat grinder and now I wanted to put them to dry, but I saw that the granules practically did not darken ((What to do? Leave until morning?
