Ingredients

pork 500 g

garlic 2-3 teeth
raisins
barberry (dried)
Vegetable oil (odorless) 1 tbsp.

Cooking method

  • To prepare pilaf, you need to take a cast-iron cauldron, put it on the fire, pour in vegetable oil and bring it to a boil. Cut the meat into small pieces and put in boiling oil. Stew the meat for 15-20 minutes. over low heat. While the meat is cooking, cut the vegetables - you can grate the carrots either on a coarse grater, or cut into strips (as you like), chop the onion and garlic finely. Throw vegetables into a cauldron to the meat, add salt and pepper (you can also add your favorite seasonings to the pilaf), mix everything and cook for another 5 minutes. Then pour rice on top of vegetables with meat, salt (in no case interfere), add a handful of washed raisins, dried barberry and pour boiling water 1/3 higher than the rice. Pilaf will languish on low heat for 30 - 40 minutes. The pilaf is crumbly and fragrant. I also add turmeric to pilaf at the tip of a knife, I like the beautiful golden color of rice.
