Ingredients

Cooking method

  • Prepare the dough for decoration.
  • 1. Mix butter at room temperature with powdered sugar and matcha tea. Stir. add egg white and flour at the end. Beat lightly. You should get a smooth, homogeneous mass. Fill a pastry bag with it (I have a disposable one), cut off the tip so that you get a very small hole.
  • 2. On a baking sheet lined with parchment paper (33 * 22cm), place thin strips. Use a toothpick to make patterns.

  • 3. Place the baking sheet in the refrigerator or freezer for 15 minutes.
  • After that, prepare the dough for the roll
  • Mix No. 1.
    1. In a saucepan (ladle), mix the milk with the matcha tea. Stir well. Add sugar, butter and salt. Heat over a fire, stirring all the time, do not boil!
  • 2. Then add flour, stir quickly, until smooth, so that there are no lumps.
  • 3. Finally add lightly beaten egg yolks.
  • 4. Mix everything well (you can use a mixer slightly) and set aside.

    1. In another bowl, beat the whites, gradually adding sugar and a little lemon juice. Whisk until firm peaks.
  • Dough
  • Add mixture No. 2 (whipped whites) to mixture No. 1. We introduce proteins gradually, in small portions, until their mixture is completely distributed.
  • Pull the baking sheet out of the refrigerator. We distribute our dough, using a pastry spatula, from above.
  • Matcha tea roll
  • Bake in an oven preheated to 180C for 20 minutes.
  • Then cover the finished dough with another parchment on top and turn on the table.
  • Remove the bottom parchment carefully.
  • Cover the dough with a towel and let cool.
  • After cooling, turn over again, spread with cream. Add candied fruits if desired.
  • Roll up the finished roll. And let it brew for a few hours
