Ingredients

Protein 200g
Powdered sugar 270g
Corn starch 30g
Lemon juice 25g
CREAM
Cottage cheese 300g
Cream 33% 150g
Powdered sugar 50g
Fresh strawberries 300g

Cooking method

  • Meringue roll
  • Turn on the oven 150 * top-bottom.
  • Mix the proteins with powdered sugar with a whisk and heat in a water bath to 45 *. Take off.
  • Add lemon juice.
  • Beat with a mixer until shine and firm "beak".
  • At the end of the batch, add the starch and stir with a spatula.
  • Put the mixture on a baking sheet covered with a silicone or Teflon mat.
  • Smooth with a spatula, approximately 1.5-2 cm thick.
  • Bake for about 20 minutes, looking in the oven, not allowing to dry out.
  • At this time, whip the cream, gradually introducing the curd cheese and powder. Vanilla sugar can be added if desired.
  • Chop strawberries arbitrarily.
  • Remove the finished, slightly springy, crust from the oven and quickly, covering with another rug, turn over and remove the one on which it was baked.
  • Allow to cool.
  • Spread with cream, lay out strawberries and roll up with a rug.
  • Wrap in parchment or foil and put in cold for an hour or two.
  • Decorate as desired.
