For the dough: products as for the “Chinese buds” recipe https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=370166.0
For minced meat: 250 g ready-made red soybeans; 125 g pitted dates; 75 g sugar; 1.5 tablespoons of fat or vegetable oil.

1. Prepare the dough as described in the recipe and let it proof.

2. At this time, puree the soybeans. Simmer the bean puree, dates and sugar in hot fat with constant stirring for 10 minutes, then remove from the stove and cool.
3. Knead the dough well and roll it into a layer 0.5 cm thick. Cut out circles with a diameter of 12 cm, grease with vegetable oil. Put 1 tablespoon of minced meat on each circle, squeeze the edges over the minced meat tightly. Leave to stand for another 10 minutes.

4. Place “Momo” in a saucepan with a sieve insert, close the lid and steam for 12-15 minutes.

A very sophisticated addition would be a salad of raw leeks, celery, carrots and cabbage.

Option: instead of circles, you can cut out squares, fill them, fold them diagonally. Fry the triangles in portions in large amounts of fat until golden brown.
