Cartellate for Christmas (Cartellate pugliesi con miele o vincotto)

Ingredients

Wheat flour, premium grade 1 kg.
Granulated sugar 2 tbsp. l.
Eggs 2 pcs.
Olive oil 200 ml.
Orange juice with 1 pc.
White wine 1/2 tbsp.
Cinnamon taste.
Salt 1 tsp
Vegetable oil (for frying) 1-1.5 liters.

Cooking method

  • Cartallate is a traditional crispy biscuit baked in Foggia for Christmas. It is also popular throughout Puglia and Basilicata. The cookie owes its name to the fact that it is made from the thinnest dough, reminiscent of "wax paper".
  • Add eggs, sugar, cinnamon to taste, filtered orange juice and warm wine with salt to the sifted flour.

  • Stir and refrigerate for half an hour. I changed the recipe a little, because before that I kneaded the dough as indicated by the author and it turned out to be tiny, the gluten did not develop at all. I put it in the refrigerator and made it my own way, but from 125 grams of flour for sample.
  • We take out and continue to knead, add not a lot of oil, I added a little more water, about 1 spoon. The dough turned out to be elastic, dense.

  • Then we roll out the dough in pieces into thin strips, cover the rest so that it does not get windy. I rolled on the "Marcato", starting from 0 to 5, walked on 5 twice. The strips are 23-33 cm long. Approximately, 2-3 cm wide. We pinch, tightening the dough and twist, fastening the strips in the form of a rose flower. If the dough does not stick well, moisten your fingers with water.

  • Boil in hot oil until golden brown. I noticed that it swells and bubbles from above. So it's better to dip it in oil, flower up.

  • Transfer to a paper towel to absorb excess oil. Then we dip it in melted honey and immediately put it on a dish where we will serve it.

  • If dipped in honey with a flower upwards, then turned over and raised, the cookie will pick up less honey. Conversely, if the bottom is down, and then turned upside down with a flower, it will pick up more honey. Decorate with sugar or cinnamon, powdered sugar.
  • There are cartellate recipes that are dipped in chocolate.

  • After cooking, the cookies are stored in a dry, dark place. If stored properly, it can be eaten for several more weeks. The cartellate tastes like chak-chak, it is soft, crumbly and very tasty.

What a yummy it is! I was treated to such a delicacy by an acquaintance who has been living in Italy for many years. The taste is somewhat reminiscent of baklava, which is worn on the beach))
