I bake rye bread using manual settings. First, in the Dough mode, I control and correct the kneading with a spatula. I forcibly stop it after about 15 minutes, because rye dough does not like long kneading. I take out the kneader, level the top of the dough with a wet spatula and run it for proofing and baking. I don't interfere with the process anymore. Proofing for 1 hour, baking for 1 hour 10 minutes. (the total amount of flour is 500 gr, of which 100 gr is wheat).

Is it possible in more detail? How much water, sugar, salt, yeast. I have the same HP and have just started baking rye bread. I bake on mode 9 - for central wheat flour.

There are many options for rye-wheat, sometimes I make it with sourdough, I make a different ratio of rye and wheat flour.

Here is a simple recipe - rye-wheat bread 2: 1.
Dry yeast 1.4 tsp
Wheat flour 150 gr
Rye flour 300 gr
Salt 1 tsp
Sugar 1 tbsp
The oil grows. 15 g
Liquid 350 gr (I often dilute whey with water; in general, it is good to replace part of the entire liquid with sour-milk products, rye flour loves this)

I add 1-2 tablespoons malt, seeds, nuts according to my mood.
Kneading 15 minutes, proofing 1 hour, baking 1 hour 10 minutes - 1 hour 15 minutes, depending on the desire to get a different crust.
I have very dry flour. If the flour is from the store, then the liquid can be reduced to 320 gr. Liquid in grams because I add it while holding the pan on the scale.

, somewhere I read that does not change. I tried - bookmark 450 +350 + sugar, salt, oil (only 880 g, no more). Not burned out.
