Ingredients

Wheat flour 350 g
Rye flour 150 g
Water 320 ml
Kvass wort (Nordik) 1 sachet 35 g
Honey 2 tbsp. l.
Olive oil 2 tbsp. l.
Salt 1.5 tsp
Dry yeast 1.5 tsp

Cooking method

  • All ingredients are at room temperature.
  • 1. Knead the dough on mode 17 (dumplings) for 10-15 minutes until a smooth, but softly spreading bun is formed, remember that rye flour is coarse and it takes more time to absorb moisture. We take out the spatula (it is possible with it), we leave the dough to rest in a closed oven.
  • 2. After about 30 minutes, when the dough begins to swell (it will increase by about 1.5 times), gently lower it with wet hands and leave it again.
  • 3. In another hour, or maybe even longer: focus on the size, the dough should be 2-2.5 times larger than the bun, turn on the baking (11 mode) for an hour and a half!
  • 4. Quietly let the stove work for 70-80 minutes. Since we have neither a window, nor an orientation on the weight of the baking and its crust, you will have to do it yourself - looking under the lid, but do not aggravate this matter: 1-2 times will be enough in 10-15 minutes to understand what you need ...
  • 5. Turn off when ready.

I baked bread for 125 minutes.
It is very suitable for lovers of honey flavors, the rest can be advised to reduce-replace honey (or part of it) with sugar.

Hello! I've never seen malt, so the solution is very simple: try it!
Wort is such a dark liquid for leavening kvass, there are 35 grams of it in a sachet, so nothing complicated

Clear. It looks like it is diluted malt ... the malt is similar to dry kvass .. I have two types of malt: light and dark brown. I bought it on the market. I didn’t even know that it comes in different colors. When kneading, I threw both dry and steamed boiling water - I did not see the difference. I will try. Thanks for the recipe
