Chocolate mint cookies

Ingredients

wheat flour 450 g
butter, hot 300 g
egg 1 PC
egg yolk 1 PC
baking powder 4 g
mint extract 1 tsp
cocoa 50 g
powdered sugar 200 g

Cooking method

  • Beat butter, icing sugar and mint extract with a mixer.
  • Beat egg and yolk separately.
  • Mix flour with cocoa and baking powder, sift.
  • Mix the egg mixture with the butter mixture and then add the flour mixture. Knead everything until the dough is homogeneous.
  • Then put the dough between two layers of film and roll out with a rolling pin to a thickness of 3 mm. It is advisable to do this on a board or a convenient sheet.
  • Then transfer the dough to the refrigerator for about 1 hour.
  • Meanwhile, preheat the oven to 170C.
  • After an hour, transfer the dough from the refrigerator to the work surface. Remove the top layer of the film, dust it lightly with flour. Press out the molds with a cookie cutter.
  • Transfer to a sheet of parchment or silicone mat.
  • Bake for 12 minutes.
  • Cool the finished cookies and immediately transfer them to an airtight container.
