I make from dry starter cultures (I love Vivo, but I love GoodFood even more, it is tastier, maybe because Vivo has 0.5g dry starter in a jar, and Goodfood has 1g in a bag), and it is still between pasty and grainy. For cheese when, then I leave it for almost a day to hang, so that it is dense (and hangs like that for Easter too), for food - it hangs for 3-4 hours. Less weightandt, the closer to the curd and the more weight. The longer, the denser, more dry and breaks down into grains, but, of course, the weight is less.

If it is made from dry starter cultures, then it is perfectly over-fermented, like yogurt.
When I put milk + sourdough for the first time, then in 10 minutes. + - a couple of minutes before switching to a high temperature, I take a whole can of 750 ml of yogurt (as I call it). The rest of the times - milk + 1.5-2 tbsp. spoons of the selected. It has been experimentally verified that the “curdled milk” costs longer than the yogurt selected for re-culture. For yogurt 4 + - 1 day, but 4 is better, for cottage cheese it can stand in the refrigerator for 7-8 days.

It turns out economically, because one sachet of starter culture is enough to make cottage cheese about 6-7 times. I always make from 2 liters of milk. When the day is hanging for cheese, then approx. 550 gr. it turns out when approx. 4 hours hanging for food, then 780-790 gr., When 5-5.5 hours for casseroles / cheesecakes / cake / other cooking - 710-720 gr. Well, the serum goes into action

I make cottage cheese from milk + kefir. For 1 liter. I take 250 ml of milk. (approximately) kefir. If there is fermented baked milk, sour cream, cream, yogurt in small quantities (as they say, neither there nor here), then everything is in milk for cottage cheese. It turns out amazingly. I weigh the night, and in the morning ready cottage cheese. From this amount, approx. 350gr.
