Homemade crackers

Ingredients

wheat flour 95g
whole grain flour 65g
wheat bran (I have rye) 13g
powdered sugar 65g
baking powder 1 \ 4h. l.
soda 1 \ 4h. l.
butter 95g
soft honey 20g (1 tbsp. L)
milk 30g (2 tbsp. L.)
vanilla extract 1 \ 2h. l.
salt 1 \ 4h. l.

Cooking method

  • Flour, bran, icing sugar, baking powder, soda, salt - mix in a bowl. I have a multimixer for a combine. Mix at low speed until all ingredients are evenly distributed. Then add chunks of cold butter. Increase the speed. The butter should be mixed with flour until fine crumbs are formed. Then add honey, milk, vanilla extract. Stir until the mixture starts to stick together.
  • Divide the dough into 2 equal halves.
  • Draw a rectangle 23 * 25 cm on baking paper. Put half of the dough, cover with a sheet of paper. Roll evenly between two sheets of paper. Check periodically for creases. Using a ruler and a knife (pizza cutter), cut into equal rectangles. Then transfer the dough to the refrigerator for 30 minutes. Or in the freezer for 15 minutes.
  • In the meantime, preheat the oven to 180C.
  • After cooling, remove the top layer of paper, prick each piece with a stick (like in store)
  • Bake for 12-15 minutes, until golden brown. Chill the finished crackers.
  • Store in a closed container for a week.

Do they taste sweet? Powder, honey, vanilla - somehow a bit too much sweetness for rye bread, isn't it?

As for my taste, everything turned out to be in moderation. True, I didn't have the extract, but it's not sweet either. And instead of soda, more baking powder.
