Ice cream "Sundae blackberry"

Blackberry 250-300gr

Egg yolks 2-3pcs

The ice cream is unusual due to the specific taste of the blackberry.
According to this recipe, you can use other berries, as well as independently change the fat content of the cream, the amount of sugar and the number of eggs.
Ingredients (per bowl 1.1l):
Blackberries - 250-300 gr
Cream (22% or 33%) - 400 ml
Egg yolks - 2 large or 3 small
Granulated sugar - 5-7 tbsp. spoons (to taste)
Preparation:
Combine the blackberries with sugar and cook over medium heat for 10 minutes, until the sugar completely dissolves and the berries become soft. Load the blackberries into a blender and beat to chop the berries. Pass the resulting puree through a fine sieve to get rid of the seeds.
Preparing the custard. To do this, put the cream on medium heat and, stirring regularly, bring it to a temperature of 80-90 degrees. Do not boil under any circumstances! In parallel, beat the yolks with sugar with a blender until a homogeneous white airy consistency is formed. Now you need to even out the temperature of the beaten eggs and cream.
To do this, add a small amount of hot cream (a small ladle) to the egg mixture and stir constantly. Add some more cream and mix again. Next, pour the egg mixture in a thin stream into a saucepan with cream (do not forget to stir the mixture constantly) and put it back on medium heat. Stirring constantly, bring to a temperature at which the mixture begins to thicken.
To check doneness, dip a wooden spoon or spatula into the mixture and lift over the saucepan. Drag your finger across the surface of the spoon / scapula. If the clean area remains this way, the mixture is ready. Do not bring to a boil under any circumstances, otherwise the yolk may curdle! Remove the finished mixture from heat and, continuing to stir, cool.
Next, combine the cream with the blackberries. Try the mixture. If it's not sweet enough, add sugar.
Cool the finished mixture to at least room temperature and cook in an ice cream maker

The dish is designed for 950g.
Cooking time: 15-20 min.
Note
If desired, you can take any other berries. Change the amount of sugar and eggs.
Cook without an ice cream maker. Using a blender and mixer. Use a regular container for freezing. Bon Appetit everyone.
