Ingredients

cream 35% 300 ml
baked milk 3.2% 150 ml
agar-agar 2 measured tsp.
mango syrup 3 tbsp. l.
sugar 4 tbsp. l.
spices for desserts KAMIS pinch
pink salt 1 pinch
ground almonds 2 tbsp. l.
dark chocolate for sprinkling

Cooking method

  • So, the milk and cream were heated to 80 degrees in a saucepan with a thick bottom, added sugar, salt and agar-agar, cooked until the sugar dissolved, stirring so that the agar-agar did not get lost in a lump. Poured a pinch of KAMIS spices, mixed, removed from the heat. (Filtered nothing). Chilled until warm, poured in mango syrup (you can, in principle, any other) and poured in ground almonds. Mixed again. When it cooled down completely, I put it in the freezer for 20 minutes. The mixture looked like pudding. Beat with a whisk until smooth and pour into an ice cream maker. After 40 minutes I took out flavored ice cream. Neither me nor the little one had the strength to wait until it finally freezes in the freezer. In total, three balls per capita sprinkled with grated chocolate.

PS: I taught me how to add salt to ice cream Alexandra, for which many thanks to her. When added, salt prevents water crystals from forming inside the ice cream, so it is homogeneous and elastic (I hope I didn't mix anything up)
