fresh cuts well if the dough is tight, for example, only on eggs

Today I bought a Maestro MP1679, checked it on paper - it cuts well both small and large noodles.
I walked as Kaiserhof, but this Maestro got caught and seemed better, well, I bought
Let's see how it will work

so noodles and do
Sandy
Aygul, tested my noodle cutter, made the dough just flour and water to exercise and peel the noodle cutter. What a beauty the dough is the thinnest already transparent, and the noodles .... so it's cool to cut both small and large. I'm making noodles for food tomorrow morning. I didn't think it was so easy and simple.
The noodles are cut well, rolled out the dough on the thinnest rolling out, and cut on both rollers, no uncut ones were observed
Aygul
Yeaaaaaaa
Here I am about the same
Do it, share your impressions and recipes, otherwise I have somehow not been able to do it well lately. Intellectually I understand that I am doing the same thing, but ... So tomorrow I am with you
Sandy
I made the dough in the combine's multimixer, 2 eggs + 2 glasses of flour + a little water, it turned out not cool at all, I thought it wouldn't work out too much water.

How to make ravioli? or rather, when I covered it with a second layer of dough and cut the squares with a knife, then they do not stick when to cook? Or does the first layer need to be lubricated with something?

And how thick should the ravioli dough be rolled out? I have 9 of them
Sandy
Aygul have you cut the noodles?
My son tried it at home, he said - awesome

And I have homemade noodles today. Already even eaten. My husband and I did it with mushroom sauce, my son doesn't really like mushrooms, then he got it with tomato sauce.

My mushroom sauce
I fried an onion in vegetable oil (you can use butter, but my last piece went into noodles). Cut the mushrooms into cubes (there were 4 pieces of large champignons), added to the onion, covered with a lid. When they stewed a little with salt and right in the pan I blended a little to break up the pieces of mushrooms, but not turn them into a solid mass. Added 1 tbsp. a spoonful of heavy homemade cream, stewed for 2-3 minutes and poured 3-4 tbsp. l. sour cream + 3 cloves of garlic (cut into small cubes), pepper. If the sauce comes out too thick, it must be diluted with broth or water to the desired consistency. I used the water in which the noodles were cooked, read in the internet that it is very good to add it to sauces.
While the sauce was preparing, the noodles had already cooled down and I poured them into the pan with mushroom sauce for a couple of minutes.
Sprinkled with chopped parsley on a plate, I still needed to add grated cheese, I didn't have it.

We recently made ravioli at a culinary master class. I'll tell you how I was taught. If they are not made in a special form, then moderation and accuracy are needed.
When the filling has already been laid out on the first layer, it is necessary to anoint it around it with water using a silicone brush. And cover the filling with the second layer, moving from one edge to the other, trying as accurately as possible and not stretching the dough to cover the filling. And try to ensure that there is no excess air under the upper layer where the filling is. Then, with your fingers, carefully press the places along which you will cut. You can lightly dust the top with flour if needed. And then just cut, again carefully so as not to hurt the filling. Then everything should stick together well.
Sandy
Ira, thanks for the advice on ravioli, I will try to do so

Everything is so delicious and beautiful! Raviolki are even, I still can't get used to it! And the ravioli are probably big!

Wheat flour 200 grams
Fresh egg 1 pc.
Clean water 5 tbsp. l.

Yes, the XL size turned out to be about 4 cm by 4 cm.

They are both collapsible. But plastic will fit more noodles at a time, that's a plus. Personally, I don't roll a lot of noodles at once, so I bought myself a wooden one (of a different configuration). Girls really praise plastic, but they roll a lot of noodles.
You still need to choose based on your needs and capabilities.
Tata
svetta Thank you. Yes, the more the better. For some reason, wooden is more expensive, apparently because of the material.
kirch
And I have a wooden one. I'm happy, I have enough. And I rarely dry noodles on it, mainly dry the rolled dough before cutting. And we eat fresh noodles.

My wooden one was generally UAH 100, the cheapest, and the plastic one was more than UAH 300.
Well, if you need a lot of noodles, then take plastic, the girls like it.

Natasha thanks
Means close up well not boiled. Why didn't you make the round ones but the crescent?
Marfa Vasilievna
Yes, not at all
Holds well, even did not wet the dough with water. I did round too. And in the photo there is a type of "dumpling" version, so, for trial ...
Sandy
So you need to take

If you really, really want to, then yes
But I don't use it often, there is a lot of waste, too lazy to mess around

I have a lot of similar cutters .. I ordered it on the joint venture ... my advice: before putting the filling on the bottom layer of the dough, mark it with the same cutter, pressing slightly so that a slightly noticeable mark is visible, it is easier to lay out the filling. And before you cut the round piece with a cutter, press the upper layer of the dough to the lower one with your hands, as if around the filling of each .. and it will bond for sure, and the air will come out ... you need to moisten it with water, if the dough is steep .. if it is sticky, then you can do it

All the time I do the same as in the second photo, with a glass, and then with my fingers I lightly and quickly walk along the rim, so that I still look like a "classic" dumpling and glue the ears. A dough sheeter is a cool thing, of course, if it is of high quality. Happy shopping!

bought a cupcake \ until I ran it \ and there puff pastry is used for pies
so here is a question in a typewriter, it can be rolled out, somebody tried it
Sprig @
Girls and boys, hello everyone! Found a noodle cutter Marcato Ampia 180 mm in the city. There is a desire to purchase. Price $ 100 e. The seller assures that this is not China. It was embarrassing that in his photo there was a pen for which to hold with a black hand. And on the official website, the handle is steel. Please tell the owners of this model in the original, what kind of handle should it actually be?
On the original, she is like this 🔗

Here is a photo of the seller, a fake or is it the original? And the inscription on the noodle cutter is different from the original. By the way, pay attention to the photo on the box, in the picture the model is different from it. So I think is it worth taking? 🔗

I haven’t tried it, but I’ll speak out .... we stuff the dumplings with any side and are not afraid of breaking the layers, but it gets into the rolls oh, how not right away ...
I also planned to make puff, but I’m afraid I’ll spoil the dough, and I’m afraid for an electric typewriter (as if the oil didn’t get into the middle, I won’t make it out later to wash it)

Piano- - we are not afraid of breaking the layers,

Duc, when I did the mugs, I trimmed them
I rolled them into a lump and rolled them back - the layers are understandably destroyed completely
but it turned out pretty well, you can even say that it is indistinguishable
I really did the top circles out of them
