Cupcake with candied fruit and cream cheese

Ingredients

Wheat flour 250 g
Egg 3 pcs
Cream cheese* 100 g
Cream 30% 250 ml
Sugar 7 tbsp. l.
Baking powder 1 sachet (10 g)
Candied fruit 100 g

Cooking method

  • Whisk the yolks, some of the cream (150 ml) and sugar.
  • Add flour, whites separately, baking powder.
  • For the filling, mix the cheese with the remaining cream. Chop candied fruits, mix with cheese mass.
  • Lightly sprinkle the silicone form "Loaf" with water, place on a baking sheet.
  • Fill out the form with a test.
  • Put candied cream in the dough deepening and cover with another layer of dough.
  • Bake for 30 minutes. at t 180 ° C in the oven.
  • Take out the form with the baking sheet, let it cool. Gently remove the cake by bending the elastic edges of the pan. You can decorate the cupcake with icing or icing sugar.
  • * Cream cheese - Philadelphia, Buco, Mascarpone, etc.

I got hold of the recipe in the book that came with the silicone mold. The truth is not with this one in which I baked ...
For this cake I used another metal one, for fidelity, greased with vegetable oil and sprinkled with breadcrumbs. There were no candied fruits in the house ... replaced with raisins.
Bake with pleasure! The cupcake turned out to be tender, airy and very tasty !!!

And I have already baked! I baked two portions! Only I have some kind of liquid cream. Maybe you need less cream? Maybe my cream is not thick? Like 35% Valio. When cut, the cream tries to flow out, but it still came out tasty. I baked until one in the morning. One round shape took 20 cm, the other - a cupcake. I baked two, because I promised to work. Olesya (as an option!) maybe you mixed the filling too much? I mean that it should not be liquid ... It turns out like sour cream 20%, liquid - but it keeps its shape. I mixed with a spoon, carefully and immediately put it into the dough. That is, I didn't have the filling. Yes, and you can cut when it's completely cooled! I honestly don't know what else to share ... Maybe (day) the night did not work? Next time everything will be 5 !!!

I baked this cupcake. The filling turned out to be just super! But the dough seemed a little dry.And the cream was 33%, maybe it turned out just not enough of them (I had 200 ml in total). In general, I really liked it. Next time I'll bake a double rate. Thank you.
