Ingredients

Biscuit:
Eggs (large) 5 pieces.
Sugar 250 g
Milk 90 ml
Butter 55 g
Light molasses 1 tsp
Flour 200 g
Vanilla sugar 0.5 tsp
Chocolate cream:
Egg yolks 3 pcs.
Milk 150 ml
Sugar 2 tbsp. l.
Corn starch 2 tbsp. l.
Cream 33% fat 150 ml
Chocolate (56-58%) 100 g
Orange peel 1 tsp
Fleur d'Oranger 0.5 tsp
Mousse:
Cream 33% fat 150 ml
Sour cream 20% fat 200 g
Powdered sugar 50 g
Orange peel 1 tsp
Instant gelatin 8-10 g
Water 2 tbsp. l.
Fleur d'Oranger 0.5 tsp
Impregnation:
Orange juice (freshly squeezed) 150-200 ml
Sugar 2 tbsp. l.
For the outer layer:
Cream 33% fat 200 g
Powdered sugar 1 tbsp. l.
Glaze:
White chocolate 100 g
Cream 33% fat 75 ml
Milk 75 ml
Instant gelatin 8 g
Water 2 tbsp. l.
Decor:
chocolate (56-58%) 50-70 ml

Cooking method

  • Biscuit:
  • Mix eggs with sugar, put in a water bath, warm slightly and beat until the volume increases by 5-6 times. Remove from the water bath and continue beating for another 6-7 minutes (until the beaten eggs have cooled to room temperature). Then add flour in several steps.
  • Bring the milk to a boil, add butter, molasses and vanilla sugar and heat until all components are completely dissolved. Add three tablespoons of dough to a saucepan with milk-oil mixture, stirring each time until smooth. Pour the resulting mixture over the dough and mix quickly with a "bottom-up" motion.
  • Pour the finished dough into a mold (line the bottom with baking paper) and bake at 170C until a dry skewer (in my oven it takes 20-25 minutes). Remove the finished biscuit from the mold, cool on a wire rack and cut into four cakes.
  • Chocolate cream:
  • Mix the yolks with sugar, starch and 1-2 tablespoons of milk (take from the total amount). Bring the remaining milk to a boil, combine with the yolk mixture and simmer over low heat until thickened. Add chocolate and orange peel. Cool completely, add fleur d'Oranger and combine with whipped cream. Put in the refrigerator.
  • Impregnation:
  • Boil the soaking syrup from orange juice and sugar and cool and soak the biscuit cakes.
  • Mousse:
  • Beat lightly sour cream with powdered sugar, add orange zest and gelatin dissolved in water. Stir in whipped cream and pour in fleur d'Oranger.
  • Assembly:
  • 1. Put half of the chocolate cream on the bottom cake (it is more convenient to collect the cake either in a baking dish or using a pastry ring), cover with the second cake. Put the mousse on it and cover with the third cake. Then add the remaining chocolate cream and place the last sponge cake on top. Refrigerate overnight.
  • 2. The next day, remove the cake from the mold, line with whipped cream and return to the refrigerator.
  • Glaze:
  • Mix milk with cream and bring to a boil, add chocolate and stir until smooth. Combine with gelatin dissolved in water and cool to room temperature.
  • 3. Cover the cake with the cooled icing (but has not yet begun to "set"), let it finally freeze in the refrigerator and decorate as desired.
