What does a gauze bag with bones and peels give?
There is a lot of natural pectin (gelling agent) in the bones and peels!
Especially in citrus fruits! The jam turns out to be a very pleasant consistency, jelly-like. I tried pitted and peeled (less fiddling), but the jam was thin. So, if you want to get something like a jam as a result, you can not put them on, this does not affect the taste.

Super! I was just now in Yandex looking for a recipe for jam or ginger jam (in Metro today I saw a jar of such jam: 400g - 133 rubles, and decided to try it myself in a bread maker!

Just tell me, plz, how exactly to adapt your recipe for a bread machine? (I have a Panasonic 253)

In my Panasonic's recipe book, the only option for cooking jam from different berries and fruits: 450g fruit + 450g sugar + 20g lemon juice.

That's what I planned: 450g of peeled and chopped ginger + 450g of sugar + 20g of lemon juice

But your recipe contains much more water and sugar than the mass of fruit ...

In general, I did not wait for an answer and did this:

- 510gr (peeled and diced ginger + 1 orange cut with the same zest in the same fine dice
- 510g granulated sugar
- 22g freshly squeezed lemon juice

program: jam (1.5 hours)

exceeded the amount of ingredients recommended in the instructions for the bread maker, but kept their proportions
The jam turned out in the end full under the neck 800g. bank

I liked the taste of the resulting jam But - for an amateur, of course! Terribly hot, but delicious. And you definitely won't eat much

The only thing - peeling ginger from the skin is a very long and tedious task!

Try a vegetable peeler, on the 6th month of using it, I manage to peel very quickly and easily not only ornate roots, but also young potatoes with a 5-teacopek coin

Spicy taste, you put a lot of ginger .. I somehow baked a gingerbread cookie and it seemed to me more delicious to add more ginger to this cookie .. it was just too spicy .. so I think if there are more oranges and lemons, everyone will like it .. ...I suppose the main filler in the store's ginger jam is something like applesauce ...

Good day! Last year I made jam according to this recipe, it turned out delicious, as I like to feel the spiciness of ginger. In this, for some reason, it did not work out like that, the ginger in the tea was normal, with pungency, and in the jam it was almost not felt. Maybe someone will tell you what the reason is? Thanks to the author for the recipe.
