Apple jam with dried apricots, honey and star anise.

Ingredients

Apples (peeled) 800 g
Dried apricots 1 tbsp.
Sugar 600 g
Honey less than half a glass
Cognac (vodka, rum) 1/3 Art.
Cinnamon wand
Badian star
Lemon - juice

Cooking method

  • In advance, star anise and cinnamon are dipped in alcohol - brew, at least overnight.
  • We clean the apples, cut them straight into salt water, then transfer them from the soda solution (2 tablespoons per liter) to 5 minutes. Drain the water.
  • Blanch the apples in boiling water for about a minute, then boil sugar syrup in this water and pour apples with dried apricots with hot syrup, add lemon juice. We leave for 4-5 hours, then bring to a boil and again leave for 8 hours (DO NOT CLOSE !!)
  • Bring to a boil for the last time, add alcohol with spices, honey - boil a little more (the apples will become translucent) and pour into jars.

I had 600 g of sugar for 800 g of apples, in the second batch I took 800 g of sugar for 1 kg of apples (which, in my opinion, is not a lot) - and honey both there and there boiled "by eye", and so - the first batch of I came out in my opinion is not even cloying .. the second is sweeter. I think you need to be careful with honey, for a honey smell it is enough to put 2-3 tbsp.

The hot syrup seemed thin to me, but then it thickened safely when the jam cooled down (apples - there is still a lot of pectin). The consistency resembles such liquid honey
