Roll Tenderness

Ingredients

For the test:
eggs 3 pcs
sugar 90 g
flour 90 g
orange peel 1 tsp
vanilla on the tip of a knife
For the cream:
sugar 75 g
corn starch 50 g
egg + egg yolk 1 pc + 1 yolk
milk 250 ml
chocolate 100 g
orange peel 1 tsp
cream 33% fat 100 ml
For impregnation:
orange juice (freshly squeezed) 100-120 ml
sugar 25 g
rum or cognac 2 h l
cocoa and powdered sugar for sprinkling

Cooking method

  • 1. Beat eggs with sugar into a fluffy mass (beat for at least ten minutes). Gradually add flour mixed with vanilla and orange zest. Pour the finished dough onto a baking sheet covered with baking paper (I have a size of 25 x 35 cm), flatten and put in an oven preheated to 190C. Bake for 10-15 minutes (until skewered dry).
  • 2. Remove the finished biscuit layer from the oven, cool slightly, cover with cling film and let stand for 2-3 hours.
  • 3. Lightly beat the egg and egg yolk with sugar, add cornstarch and stir until smooth. Bring the milk to a boil, combine with the egg mixture and boil over low heat until thickened. Add chocolate and orange zest and heat together until the chocolate is completely dissolved. Then cool completely and combine with whipped cream. Put in the refrigerator.
  • 4. Combine orange juice with sugar and boil about half. Cool completely and add rum or cognac.
  • 5. Separate the biscuit layer from the baking paper, soak in cooled orange syrup. Then spread the cream over the surface and roll up the roll. Sprinkle the top of the finished roll with cocoa mixed with powdered sugar.
