Chinese pancakes with green onions

Ingredients

Wheat flour 375g.
Water 60C 250g.
For filling:
Sesame oil
Salt
Green onions 35g.
Vegetable oil for frying

Cooking method

  • Heat water to 60C, add flour, mix. The mass turns out to be dryish and heterogeneous.
  • Place it on a lightly floured work surface and knead it well until smooth and elastic. The dough should not stick to your hands (add flour if necessary). I kneaded with knives in Thermomix for 1 minute. I didn't add flour.
  • Grease the dough ball and place in a greased container. Cover with a damp cloth and let sit for 30 minutes.
  • Wash, dry and chop the onion.
  • Grease the table with butter, lay out the dough and roll it into a rectangular layer as thin as possible. The layering of the finished pancakes will depend on this.
  • Sprinkle sesame oil on the layer and gently spread it over the entire surface with a brush or palm. More comfortable with the palm of your hand.
  • Sprinkle the dough with salt and green onions.
  • Starting from the long edge, roll the layer into a roll, then cut into 4 equal parts.
  • Roll each segment tightly in the form of a snail. Press the snail with your palm, flatten it, then gently roll it with a rolling pin into a round cake.
  • Fry in a preheated pan with 1 tbsp. l. butter each tortilla over moderate heat for about 2 minutes on each side. I just brushed on the APT frying pan.
  • Cut into triangles and serve immediately.

There was no sesame oil, I replaced it with sunflower oil. I cooked 2 times. The first time I kneaded in HP, rolled out, fried immediately. The second time after kneading the dough "rested" and rolling, frying did not take place immediately. The second time the dough was more elastic and pleasant to work with. Both options did not differ in taste. But I liked adding salt to the dough, not to the dough.
In general, deliciously unbearable! There is something from the cheburek ... Or in the post I dreamed of something like that ...

Ksyusha, pancakes sunk into the soul. Now cooked with corn flour. The proportion is as follows: water - 300 ml, wheat flour - 280 g, corn flour - 120 g. Opinions diverged. I liked the corn-wheat version more, my husband liked the wheat version. But definitely delicious!
