Gelatin - chemistry and there is nothing to say.
Zhelfix - pectin + citric acid + components I do not understand (dextrose, adsorbitic acid, etc.). That is, I don’t want to put what I don’t understand. But agar-agar and pectin are natural.
In addition, it has already been written somewhere that neither gelatin nor gelatin increases the shelf life.
