Cream 10% fat 500ml
Draining. oil 82.9% fat 40g
Bitter chocolate 72.5% 135gr

I bought an ice cream maker - and the very first experiment turned out to be just great, so I can't help but share it !!!
This recipe will be especially valuable for those who are losing weight on the Atkins or Kremlevka diet, diabetics, and those who do not eat sugar. By the way, the aftertaste of the sweetener is not felt at all.
So, we take half a packet of cream, butter, heat over low heat and stir constantly, dissolve the dark chocolate. We do not bring it to a boil, as soon as it starts to boil, remove it from the heat, stir it, put it on the fire again, and so on until the chocolate is completely dissolved. Remove the chocolate mixture from the heat, add vanillin and cognac, and leave to cool. Stir the mixture periodically so that a film does not form on top. When the mixture is not very hot, add the crushed sweetener and 2 egg yolks. The mixture continues to cool, and we take the remaining proteins, beat until peaks, then pour the remaining half of the cream there, beat, pour this mixture into the already cooled chocolate, stir with a spoon and pour into an ice cream maker. I divided it into 2 batches, the first froze for 20 minutes, the second took longer, 30-35 minutes.
At the exit, I weighed, it turned out 730 gr.
For 100 g of ready-made ice cream: proteins - 5.46 g; fats - 20.9 g; carbohydrates - 9.8 gr.
I added butter solely because the cream was 10%, if you do not add 20 or 30% butter!
