Frozen cassata

Ingredients

Egg white 2 pcs.
sugar 50 g
Water 25 ml
Cream 35% 130 g
Raisins 2 tbsp. l.
Dates 55 g
Canned pineapples 60 g
Fresh strawberries 80 g
Orange zest 1 tsp

Cooking method

  • Sprinkle a sheet of foil with water and cover it with cling film on top - cover the portion molds with the resulting sheet of foil and film so that the edges hang down.
  • Finely chop the strawberries, pineapples, dates.
  • Dissolve sugar in water and boil a little (1-2 minutes).
  • Whip the cream until creamy.
  • Beat the whites until foamy. Pour hot syrup into the whites without stopping whisking. Beat until firm peaks.
  • Mix whites with cream and stir gently with a spoon. Add strawberries, pineapples, dates, raisins - stir.
  • Put the resulting mass in covered molds. Cover with free edges on top and put in the freezer for at least 1 hour.
  • Turn the finished cassette on a saucer and decorate as desired
