Ingredients

Flour 260 g
Cocoa powder 30 g
Butter 250 g
Powdered sugar 100 g
Egg whites 2 pcs (55-60 g)
Salt pinch

Cooking method

  • Preheat oven to 180aboutC. Line a baking sheet with baking paper. Prepare a pastry syringe or cookie transfer bag.
  • Sift the flour along with the cocoa powder.
  • Whisk butter at room temperature with icing sugar until creamy.
  • In a separate bowl, beat the egg whites with a pinch of salt.
  • Combine the butter mixture with the flour mixture. After fully mixing, add the whites and gently mix them into the dough, in three steps, from bottom to top, so that they do not fall off if possible.
