Persian rice

Ingredients

basmati rice 300 g
orange (medium) 1 PC
lime 1 PC
carrots (medium) 1 PC
onion (medium) 1 PC
dried cherries 50 g
pistachios 50 g
almond 50 g
hazelnut 50 g
ghee butter 50 g
olive oil 50 g
mixture of spices "Ras el-khanut" 2 h l
saffron (ground) 0.5 box l
salt taste
dry rose buds (optional) 3-4 pcs

Cooking method

  • 1. Remove the zest from the orange and lime and cut into thin strips. Squeeze the juice, mix with honey and boil. Put the zest and chopped carrots in the boiling juice and simmer over low heat until soft. In this case, almost all of the juice will evaporate.
  • 2. Cut the onion into thin half rings and simmer in a frying pan in butter until transparent. Add half the zest with carrots, cherries, spices and simmer for 5-7 minutes.
  • 3. Coarsely chop the nuts and fry them separately in a dry frying pan.
  • 4. Soak the rice, rinse and cook in plenty of water with the addition of saffron and salt until half cooked. Throw in a colander.
  • 5. Pour olive oil into the bottom of a baking dish. Mix the rice with the remaining zest and carrots and spread over the bottom of the mold. Top with the onion mixture, then the nuts. Cover and put in an oven preheated to 160C for thirty minutes. Sprinkle the cooked rice with rose petals (rub lightly with your fingers) and serve immediately.

A mixture of "Ras al-Khanut" can be bought at any store of oriental spices and via the Internet as well. But they can be slightly different in composition. Most often, the main ingredients are: nutmeg, cinnamon, black and allspice, cardamom, ginger, turmeric, lavender, or rose petals.
