Gourmet cake with meringue and cranberries

Ingredients

Cakes:
Egg yolks (dough) 6 pcs.
Eggs (dough) 2 pcs.
Granulated sugar (dough) 1 glass
Flour 1 glass
Meringue:
Egg whites (meringues) 6 pcs.
Granulated sugar (meringue) 1 tbsp.
Starch (meringue) 1 tsp
Impregnation:
Sour cream 20-30% (for greasing the cake) 2 tbsp. l. with a slide
Granulated sugar (for greasing the cake) 1 tsp with a slide
Cream:
Butter 200 g
Condensed milk 3/4 cans
Interlayer:
Fresh cranberries 1-1.5 tbsp.
Granulated sugar 1-1.5 tbsp. l.

Cooking method

  • Cakes:
  • Knead the batter (yolks + eggs + sugar + flour). The consistency of a batter like a charlotte.
  • Divide into 2 parts to bake 2 cakes. The cakes should be soft, without a crust, not overdried, almost white.
  • Bake for 10-15 minutes at 150 degrees.
  • The finished cakes should cool, but not dry out. Covered with foil.
  • Meringue:
  • Beat the meringue: proteins + starch + sugar. Since my eggs were large (C0 category), I had to add granulated sugar in excess of the specified norm.
  • Bake small meringues. Baked for 1 hour at the lowest temperature (I have a gas stove with at least 150 degrees).
  • Impregnation:
  • Beat lightly (10 min.) Sour cream with sugar. Spread the mixture on the bottom cake.
  • Put the meringue on it. Spread out tightly, but without breaking.
  • Cranberry interlayer:
  • Mash the cranberries slightly. You can also use a blender. This is how you like it. Mix with 1-1.5 tbsp. l. Sahara. Here, too, to taste. Since the cake is sweet, then for me, the more sour the cranberry layer, the more interesting.
  • It's not bad if you have a few whole berries. It is very pleasant when they come across in the process of eating the cake ...
  • Spread the cranberry mixture in between the meringues. Leave a little - 1/3 cup to decorate the top of the cake.
  • Next, put the 2nd cake.
  • Cover it with butter and condensed milk cream.
  • We coat the sides of the cake with the same cream.
  • We put bezeshki on top. Between them, again, wrinkled cranberries or whole berries. But whole berries roll off when you cut and eat it ...
  • Break a few meringues into crumbs and sprinkle the edges.
  • You can overlay the sides with bezeshki, and sprinkle with bezeshka crumbs between them.
