I bake on a low grate and in a form with sides (I adapted ordinary Teflon pans by unscrewing the handles). The result is excellent. In all other cases (trays without sides, lattice with foil, baking paper) - there was the same garbage as yours. For myself, I concluded that the oven should be in metal forms with sides. There are no more problems.
