Elena, I start each time from the moisture content of the flour and look at the dough during the kneading process. Flour is always different and takes a different amount of liquid. I gave the recalculation based on the main recipe, but I gave the correction for milk after the fact. You need to look to get, if you can call it that, a smeared half-gum. The cake dough is very rich and should not be a bun. It is soft, tender, floating (but not liquid).
This time I baked on "Extra. French Thing" flour. The flour was very dry and I had to add milk.The amount of liquid also depends on the category of eggs. And if you take only yolks, then you need to take more milk.
