Homemade apple-pear marmalade

Ingredients

Apples and pears puree in equal proportion (net weight of peeled fruits) 450 g
Sugar 300 g
Pectin (I used Gelfix Dr. Oetker Zhelfix Extra 2: 1) 15 g
Sugar (mix with pectin) 40 g
Lemon juice 50 ml

Cooking method

  • Much, very much has been written about the benefits of marmalade, just that it contains a lot of pectin, which removes salts of heavy metals from the body, gives it a place to be in the diet of us and our children! I think that homemade marmalade has much greater useful properties than the one bought in the store - after all, there are no dyes, preservatives and other bad additives in it, and then, it is very, very tasty!
  • Due to the humidity, which is very high in Greece at this time of the year, the marmalade had to be dried under conditioner, it turned out to be soft and very rich. If you like more elastic and dense marmalade, then you need to increase the amount of sugar by 1.5-2 times, and if you reduce the amount of pectin by 2 times, you will get a wonderful homemade jam.
  • Peel apples and pears, grate and boil lightly, I did it in a microwave.
  • Punch in a blender until puree or rub through a sieve.

  • Mix mashed potatoes with sugar and bring to a boil, sugar should completely dissolve.

  • Reduce heat and add pectin mixed with 40 g of sugar to the puree. stir well and cook, stirring constantly with a spatula for 10 minutes, add lemon juice and stir.

  • Pour into a prepared container 20x20 cm covered with baking paper and leave at room temperature for 24 hours.

  • Then turn over to the other side onto clean paper and leave to dry for another 24 hours.

  • Cut into pieces or using the cookie cutter and roll in sugar.

  • Store in a dry and cool place in a closed container, for how long? Hard to say, because the next day there was no marmalade.

No, Sveta, you can't use gelatin, and it's not tasty on agar-agar either! try to cook more apples, increasing the amount of sugar by almost 2 times, but still it's not the same! You can buy pectin on the internet, just google it, good luck!
