Ingredients:

- eggs - 3 pcs.;
- sugar - a quarter cup;
- milk - 2 glasses;
- butter - 30 g;
- flour - 2 glasses;
- vanillin - 1 tsp;
- baking soda - 0.5 tsp;
- salt - 0.5 tsp.
Mix 3 yolks and sugar in one container (use a mixer).
When the mass becomes homogeneous, add vanillin to it and beat again with a mixer.
Melt the butter and add it to the base that has already been cooked.
Pour in 2 glasses of milk.
In a separate container, mix flour, salt and baking soda and pour the base from the previous products into them. Mix all ingredients using a mixer.
Beat the proteins that remain from the eggs with a mixer until an air mass is formed (it resembles an eggnog in appearance).
Mix the waffle base by hand with the airy cream (do not use a mixer!). This must be done carefully - this will make Viennese waffles soft and light.
Bake the waffles in a heated and oiled electric waffle iron for 2-3 minutes.
