Rye cookies with carrots

Ingredients

Rye flour 1 stkn
Oat flakes 1 stkn
Grated carrots 1 stkn
Walnuts 1 stkn
Vegetable oil 100 ml
Soda 0.5 tsp
Salt 0.25 tsp
Sugar 0.5 stcn
Ground ginger 1 tsp
Zest of half a lemon

Cooking method

  • 1. Prepare the ingredients - grind the oatmeal, three carrots on a small grater (about 2 medium-sized carrots).
  • 2. In a bowl, combine dry ingredients - oatmeal, rye flour, baking soda, salt, sugar and carrots.
  • 3. Then add coarsely ground nuts, grated ginger (on a small grater), and zest of half a lemon, mix everything.
  • 4. Lastly add vegetable (I used refined sunflower) oil, mix well.
  • 5. Knead the dough for about 5 minutes, until it is very sticky. If you see that your dough is too crumbly, then add a little sunflower oil.
  • 6. Take some dough and form into balls a little larger than a walnut.
  • 7. Shape them (flatten a little). The dough is a little sticky and you need to grease your hands with vegetable oil.
  • 8. Place them on a baking sheet (cover with baking paper and grease with sunflower oil).
  • 9. Bake them at 180aboutFrom about 15-20 minutes until golden brown.

But if you replace oatmeal with corn flour, then it turns out tasty and original in taste. Husband liked it more than oatmeal

This recipe immediately attracted my attention by the presence of rye flour in the composition, of course, dessert pastries with rye flour are found on the Internet, but not to say that there are too many recipes ..
And I also liked that in this recipe you can experiment with replacing an ingredient or even several at once, thus getting cookies of different taste. I would like to try to bake these cookies with corn and wheat c / grain, and with semolina. You can also try adding some raisins or other dried fruits.
Unfortunately, I haven't tried baking according to the original recipe, since not all the ingredients were found at home, so I had to start right away with experiments:
instead of nuts - sunflower seeds
instead of oatmeal - grains of Yachenka (from Belovodye)
and I had to add 30 grams of wheat c / z to the rye flour
A pleasant bonus is the absence of a sense of guilt before the figure (which already needs to lose weight) when eating (moderate, of course)
