Because the question is strange enough, you don't seem to be reading the discussion above.
Flour 600 g in the recipe from the instructions does not take into account the peculiarities of the flour you bought specifically, I mean universal flour for bread makers, standard moisture, strength, moisture absorption according to the recipe. Your specific flour was purchased from you. It may differ in terms of performance from what is meant in the instructions. It may be stronger or less water-absorbing than what the instructions say.

The instruction cannot take into account all the features of storing flour in stores in different countries.

The water in the instructions is assumed to be of acceptable quality. We have very different flows through the pipes.

Yeast in the instructions is assumed to be of medium strength. We sell them very, very different from everyone. My yeast is fusion yeast. From two spoons for 600 g - my bread would explode.

Therefore, it is impossible without having in your arms your flour, water and yeast, indicate exactly what the instructions are not right for you.

And now about my own experience on the example of this case, maybe someone will come in handy.
I realized that everything depends on the temperature sensor. When the stove is closed, it falls very slowly inside! With the oven working in the kitchen, it took me about an hour. And - interesting! even when the bottom and walls were cold, they were hotter in the area of ​​the sensor.
Using a mechanical thermometer, these values ​​were in the range of about +38 - walls - bottom, and +40 around the sensor.
And, only when the temperature at the sensor dropped below 40, the program started working!
The bread came out molded, but very, very hardened!
