Black Pearl Cake

Ingredients

For chocolate cakes:
dark chocolate (72%) 150 g
odorless vegetable oil 1 tsp
For a sand base:
powdered sugar 25 g
butter 50 g
flour 75 g
cocoa 2 h l
cognac 2 h l
For a biscuit:
dark chocolate (72%) 60 g
eggs 3 pcs
corn starch 1 tsp
For the layer:
blackcurrant jam 3 tbsp
lemon juice
instant gelatin 1 tsp
blackcurrant liqueur 1-2 tbsp
For the chocolate mousse:
cream 33% fat 300 g
sugar 60 g
egg yolks 3 pcs
dark chocolate (72%) 130 g

Cooking method

  • Chocolate cakes:
  • On baking paper, mark two circles D20 cm. Melt the chocolate in a water bath to 55C, then, stirring vigorously, cool to 29C and reheat in a water bath to 32C. Pour in vegetable oil, stir vigorously and apply on the prepared stencil with a layer of about 3 mm. Allow to cure completely at room temperature and carefully remove from baking paper.
  • Sand base:
  • Fold all ingredients (except brandy) into a blender and beat until finely crumbled. Then pour in brandy and knead the dough with your hands. Spread the dough over a baking dish (D20cm) and bake in an oven heated to 180C for 10-15 minutes.
  • Biscuit:
  • Separate the whites from the yolks from two eggs and beat them into a strong foam. Lightly grind the yolks with a whisk with starch. Melt the chocolate, intensively stir in one egg with a whisk, then add the yolks with starch and, while stirring constantly, cool slightly. Combine in several steps with proteins and pour the dough into a mold covered with baking paper. Bake in an oven heated to 170C for 12-15 minutes.
  • Interlayer:
  • Heat the lemon juice and dissolve the gelatin in it. Mix jam with liqueur and pour in ready-made gelatin. Put two-thirds of the resulting mixture on a shortbread cake, lay a biscuit on top. Lubricate the sides of the cakes with the remaining mixture and allow to harden.
  • Chocolate muss:
  • Grind the yolks with sugar. Bring 100 ml of cream to a boil, combine with yolks and heat over medium heat until thickened. Whisk the remaining cream well. Melt the chocolate, with the yolks and cool to room temperature. Then combine with whipped cream in several steps.
  • Black Pearl Cake
  • Assembly:
  • Transfer the finished mousse to a pastry bag with a round nozzle D 1 cm. Place half of the mousse on a sponge cake and cover with chocolate.

  • Apply the remaining mousse to the chocolate crust.

  • Cover with the remaining chocolate crust and sprinkle with cocoa and powdered sugar. Put in the refrigerator until the mousse hardens completely.
