Lemon fantasy cake

Ingredients

Biscuit:
Wheat flour 1 tbsp.
Sugar 3/4 Art.
Egg 5 pieces.
Opener 1 tsp
Zest of one lemon
Impregnation:
Syrup
Meringue:
Egg whites 3 pcs.
Sugar 3/4 Art.
Crushed hazelnuts 3/4 Art.
Cream:
Yolks 3 pcs.
Lemon juice 1/3 Art.
Sugar 1/2 tbsp.
Oil 60-70 g
Sweet cream 38%
(I take Valeo for whipping 38%)
375 ml

Cooking method

  • Biscuit:
  • I made Tortyzhki by lessons here from here... I baked in a slow cooker for 60 minutes + 10 minutes of proofing with the lid closed after the beep. The oven was drying up at this time classic meringue ... I made two cakes with a diameter of 20 cm so that they fit in diameter under a multi biscuit.
  • Cream:
  • Well, the cream is exactly like the recipe.
  • Combine the yolks with the sugar. Whisk a little. Add lemon juice.
  • On a small fire bring the mixture to thickening (sugar dissolving).
  • Let cool slightly and add oil. Stir and refrigerate (preferably overnight). In the morning, beat the lemon mass (it will not beat up much). Whisk the cream until stiff peaks in a separate bowl and stir in the lemon cream.
  • Assembly:
  • Cut the biscuit into 3 cakes. Saturate them with syrup. Collect the cake in this order
  • Biscuit-Cream-Meringue
  • Biscuit Cream
  • Biscuit-Cream-Meringue
  • Decorate as your imagination tells you. I made, like the author's, strips of melted chocolate.

I make lemon syrup very easily - my lemons are stored in a jar, cut into slices and covered with sugar. I put such slices in tea, but here I needed impregnation - I took and poured from the jar the juice that the lemon gave under the influence of sugar. I diluted this juice a little with vodka. That's all my syrup. And the second time I made this cake, I took it and soaked it with cherry liqueur, which my mother made. It also turned out very tasty. So you can saturate with what you like.

The cake was made by my sister at DR. Only changed a little. I didn't add the nuts to the meringue, but to the layers between the cakes. I put nuts in the lower tier, but left the upper one without them, so that later I could compare which tastes better. In fact, lemon and nuts go well together.
I brewed lemon cream for one portion and added 500 gr. cream.
If I made a double proportion of cream, then the cake would be sour, and everything is fine.
The cake is delicious and refreshing.

I made VK with lemon zest, I began to add 10-12 g of gelatin to the cream, because it was very delicate .. I wanted to fix the structure. The meringue was made from the remnants of wet meringue .. without a nut, I don't like it). If you want a crispy layer, coat the meringue cake with white chocolate.
